How To make Lazy Salmon Cakes
1/2 c Mashed potato, 1 medium
1 tb Lemon juice
1/2 ts Lemon or orange peel dry
1/2 ts Dry dill or 1/4 c fresh dill
1/2 ts Dry cilantro /fresh parsley
1/4 md Onion, chopped
7 1/2 oz Can salmon, no skin, bones
1 Egg
Re "Lazy" - this was based on a recipe posted by Michelle Bass, Cooking Echo, Sept 17/93. I was too lazy to bake the potato, beat the egg white or make the sauce. Mash potato and allow it to cool. Mix with lemon juice, seasonings, onion and then mix in the salmon. Mix in beaten egg. Form the mixture into 4 patties or 6 smaller ones. Heat a large saute pan over medium heat. Spray or wipe with canola. Fry the cakes for 5 minutes on each side until golden brown. Serve with lemon wedge. Makes 2 servings for hungry eaters, 3 smaller ones. R E C I P E
2 (14.5 oz) cans wild caught pink salmon, drained
1 egg
1/4 cup mayo (video:
2 tbsp hot sauce
2 tbsp lemon juice
1/2 cup almond flour (or a few tblsp coconut flour)
1 tsp celery seed
1 tsp onion powder
1 tsp garlic powder
1 tsp black pepper
1/2 tsp salt
1 tsp 21 seasoning salute (optional)
Mix all ingredients really well and form into 12 patties. Bake at 425 degrees for 15 minutes, flip and bake another 10 minutes. These are very good cold with mustard!
Makes 12 patties
MACROS per patty: 116 calories, 9g fat, 8.5g protein, 0.8g net carb

Salmon Patties - Low-Carb and Keto
Salmon Patties (or Salmon Cakes) can be made with fresh salmon - or canned salmon. In this episode, Dennis makes low-carb (and Keto friendly) salmon patties with with tartar sauce that are incredibly delicious. Made with ingredients that are easily sourced, this is a great dish when you have some cans of salmon laying around.
INGREDIENTS:
- 12oz canned salmon (skinless and boneless in water)
- 50g pork rinds (~2.2 oz) or a product like pork panko
- 2½ eggs (yes, 2½. 3 is too eggy and with 2, the patties fall apart too easily)
- ¼ red onion, chopped
- ~½ tsp paprika
- ~½ tsp garlic powder
- salt and pepper to taste

DIRECTIONS
1. Begin by preheating your cast iron griddle/skillet on a low setting. If using stainless steel, this step can be skipped.
2. In a large bowl add the chopped onion, the eggs, and the spices. Mix until it is well combined. To get the ½ egg, simply crack an egg into a separate vessel, scramble it, then pour half of it into the main mixing bowl.
3. Drain the canned salmon so there is a little water as possible, then add it to the main bowl.
4. In a food processor or blender, make panko style crumbs from the pork rinds. Then add to the mixture and mix until the ingredients are well mixed, but the salmon is still rather flaky.
5. Add some oil and a nice knob of butter to your hot pan.
6. Using an ice cream scoop, fill it with a mixture and form the meat into a hockey puck shaped disc.
7. Place the puck into the pan and move it around a little bit. Then give it a light press with a spatula to form a thinner, but wider patty. I only added two patties at a time in my griddle due to the heat dissipation - you'll have to play with your pan to see how many you can comfortably fit.
8. Flip the patties when they are golden brown and don't easily fall apart when you slip a spatula underneath them.
9. Once they have browned on the bottom, remove and enjoy with tartar sauce and hot sauce (Cholula works great)

How To Make Keto Salmon Patties - Low Carb Salmon Cakes - Keto Recipes
If you are looking for a Low Carb, Keto Friendly Salmon Recipe, you should give these Salmon Patties a try. I used Fresh Salmon to make these Croquettes, but you can use canned Salmon as well.
This recipe can be made using crab, shrimp, lobster as well as most other fish.
Ingredients For Keto Salmon Patties:
* 1 1/2 Pound Of Fresh or Canned Salmon
* 1/4 Cup Shallots or Onions
* 1/4 Cup Red Peppers
* 1/4 Cup Orange Peppers
* 2 eggs
* 1/4 Cup Mayonnaise
* 1 1/2 Tbsp Butter to Saute Vegetables
* 4 Tbsp. Butter To Cook Salmon Cakes (or as needed)
* 1/2 Cup Almond Flour (Adjust as needed to bind salmon cakes)
* 3 1/2 Tbsp. Old Bay Seasoning (Old Bay Rub)
* 1/2 Tsp. Pepper (to taste)
* I added a couple Tbsp. of Dried Hot Peppers (Optional)
