How To make Lebkuchen(German Honey Cakes)
1 c Honey
3/4 c Light brown sugar
1 ea Lemon
juice of
2 ea Eggs :
beaten
2 1/2 c Flour sifted
1 t Baking soda
1/2 ts Nutmeg
1/2 ts Cloves
1 t Cinnamon
1/4 c Almonds :
shredded
1/4 c Citron -- chopped
Combine honey, sugar, lemon juice and rind from the lemon. Beat in egg. Sift dry ingredients and add to egg mixture. Add citron and nuts and let stand one day (covered). Roll out dough 1/2 inch thick and cut into fancy shapes. Bake on buttered cookie sheet in 400 degree oven until browned.

Things You'll Need:
Lebkuchen
Candied citrus peels
The peels of 1 navel orange and 2 lemons, sliced into ¼” strips
4 cups water (for boiling)
1 cup water (for syrup)
2 cups sugar
½ cup Granulated sugar (for coating)
Cookie dough
½ cup honey
1 cup brown sugar
¼ cup unsalted butter, cut into cubes
1 egg, beaten
¼ cup candied lemon peel, finely minced
¼ cup candied orange peel, finely minced
1 ¾ cups all-purpose flour
1 cup ground almonds
1 teaspoon lemon juice
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 tablespoon cinnamon
1 teaspoon cloves
¼ teaspoon allspice
¼ teaspoon coriander
¼ teaspoon cardamom
¼ teaspoon ginger
¼ teaspoon star anise
Pinch of nutmeg
“Back Oblaten” edible paper rounds (optional)
Glaze
½ cup powdered sugar
1 tablespoon + 1 teaspoon water
1/8 teaspoon rum extract
Chocolate glaze
1 cup semi-sweet chocolate chips
2 teaspoons coconut oil
Decoration
Whole blanched almonds

I had so much fun #baking these traditional German #cookies with my friend Trish! This cookie is hundreds of years old but is absolutely delicious for #holiday season! I dont think I've ever added so many ingredients to a single cookie, but it is worth it!

GINGERBREAD COOKIES | gingerbread man recipe
Hello everyone! This is my favorite gingerbread recipe. The cookies are soft and very aromatic. Keeps soft for a long time when stored in a closed container.
INGREDIENTS:
150g honey
100g granulated sugar
1tsp ground cinnamon
1tsp ground ginger
1/2 tsp ground cloves (optional)
2 tsp baking soda
130g unsalted butter (room temperature)
1 egg
400-450g flour
COOKING METHOD:
1. Put honey, sugar, and spices in a saucepan. Bring to a boil, stirring occasionally.
2. Remove from heat and add baking soda, stir (the mixture will foam and increase).
3. Add butter gradually and stir. Add egg and stir.
4. Add sifted flour and knead the dough (I took a hand mixer with hook attachments). Form a ball.
5. Roll out the dough 5mm thick between two sheets of parchment or silicone mats. Put in the refrigerator for 30 minutes-1 an hour.
6. Cut out the cookies and transfer them to a baking sheet covered with parchment paper.
7. Bake at 350F/175C for 10 minutes.

German Christmas spices
Mixture of spices of German gingerbread
Ingredients
250g Flour
100g ground Hazelnuts
45g Cocoa powder
200g brown Sugar
3 Eggs
230g Butter
60ml date syrup or molasses
230ml Milk or Butter milk
10ml white Vinegar
10g Baking powder
15g Lebkuchen spices
Pinch of salt
With cups
2 cups Flour
1 cup ground Hazelnuts
3 tbsp Cocoa powder
1 cup brown Sugar
3 eggs
1 cup Butter
4 tsp date syrup or molasses
1 cup Milk or Butter milk
1 tbsp white Vinegar
1 tbsp Baking powder
1,5 tbsp Lebkuchen spices
Pinch of salt
The cake can be prepared with only flour, replace the cup of ground nuts with a half cup of flour.
The total amount of flour for the cake becomes 2.5 cups flour instead of 2 cups.
Preparation:
In a mixing bowl, add butter and sugar and mix well
add eggs and vinegar
add milk and molasses and continue mixing
Add ground hazelnuts and stir the mixture
Sift the dry ingredients and mix till get a homogeneous batterGrease the baking tray (25 cm to 28 cm diameter) with butter or lined with parchment paper
Bake the cake in a preheated oven at medium temperature 180 °C on a medium rack for 30 to 40 minutes or till golden
To decorate, 100 g of chocolate, as desired
After the cake cools, decorate as desired
