How To make Lemon Berry Bread
1/3 cup canola oil
2/3 cup sugar
2 tablespoons lemon extract
4 egg whites
1 1/2 cups flour
1 teaspoon baking powder
1/2 cup milk
1 cup fresh blueberries*
2 tablespoons grated lemon rind
Lemon glaze: 1/2 cup sugar
1/2 cup lemon juice
Preheat oven to 350. In a large bowl, mix oil, sugar, lemon extract, and egg whites. In another bowl, combine flour with baking powder. Add flour mixture to sugar mixture alternately with milk, stirring just until blended. Fold in blueberries and lemon rind. Pour batter into 9 by 5-inch loaf pan coated with non-stick cooking spray and dusted with flour. Bake 40-50 minutes or until toothpick inserted in center comes out clean. Immediately poke holes at 1-inch intervals on top of bread and pour lemon glaze over.
Glaze: in a small saucepan, combine sugar and lemon juice, heating until sugar is dissolved. *if fresh blueberries are not in season, use thawed frozen ones.

Lemon Blueberry Poppy Seed Loaf Ingredients:
1 2/3 cups flour
1 Cup blueberries, fresh
2 Tbsp. poppy seeds
1 Tsp. baking powder
1/8 Tsp. baking soda
1 Cup granulated sugar
3 Tbsp lemon zest
1/2 cup unsalted butter, room temperature
3 eggs, room temperature
1/2 tsp vanilla
1/4 cup of sour cream
1/4 Cup milk
4 Tbsp fresh lemon juice
INSTRUCTIONS
Preheat oven to 350 degrees. Spray a loaf plan and set aside.
In a mixing bowl, whisk together flour, poppy seeds, baking powder, and baking soda. Set aside.
Add sugar and lemon zest to the bowl of an electric stand mixer fitted with a paddle. Mix. Add butter to sugar mixture and mix on medium speed.
Mix in eggs one at a time, adding in vanilla and the last egg.
In a microwave safe bowl whisk together the milk with sour cream. Heat mixture in microwave just until room temperature.
Mix all ingredients adding gradually and not over mixing. Add the blueberries and mix lightly so berries don’t break.
Bake in preheated oven 45 to 50 minutes until a toothpick comes out clean. Remove from oven and allow to cool 5 minutes in loaf pan before turning out onto a wire rack.

Here’s the ingredients:
75g Melted Butter
215g Granulated Sugar
2 Eggs
1/2 tsp Vanilla Extract
190g Plain Flour
1 tsp Baking Powder
1 tsp Salt
125ml Milk
100g Blueberries
2 tbsp Flour (for coating)
2 tbsp Lemon Zest (grated)
Lemon Glaze:
2 tbsp Lemon Juice
50g Icing Sugar

(Double the ingredients if you want more Glaze)
Bake in 350F for 16-17 minutes
