How To make Lemon Custard Cake
6 Egg yolks
3/4 c Sugar
3/4 c Freshly squeezed lemon juice
1 1/2 ts Grated lemon rind
1 Unflavored gelatin
1/4 c Cold water
6 Egg whites
3/4 c Sugar
1 lg Commercial angelfood cake
Whipped cream Maraschino cherries In small bowl of electric mixer, beat egg yolks with 3/4 cup of the sugar until thick and lemon-colored. Blend in lemon juice; stir in rind. Transfer to top of double boiler, and cook over hot (NOT BOILING) water until mixture coats a spoon; remove from heat. Sprinkle gelatin over cold water, allow to soak for 5 minutes, then stir into hot mixture until dissolved. Cool custard at ROOM TEMPERATURE. Beat egg whites until soft peaks form. Gradually add 3/4 cup sugar, and beat until stiff. Fold into cooled custard. Oil a large tube cake pan; tear cake into bite-size pieces, and arrange in pan in alternate layers with custard. Chill until firm. Unmold, fill center with whipped cream, and decorate top with maraschino cherries. OR, entire cake may be iced with whipped cream and garnished as desired. Yield 10 to 12 servings. 상큼한 레몬 커드 크림을 가득 올린 레몬 커드 케이크를 만들었어요~
시트는 레몬 제스트를 넣고 파운드 케이크보다 조금 더 부드럽게 구워 사용했어요~
레몬 커드를 넉넉히 만들어 반은 생크림과 섞어 케이크에 샌드하고 반은 케이크 위에 듬뿍 올려 장식했어요~^^
레몬 커드는 충분히 냉장고에서 식힌 뒤 꼭 체에 걸러 사용하셔야 부드럽고 매끈한 크림이 된답니다~
옆면에 크림을 얇게 발라 시트가 보이게 아이싱 했는데 오가닉한 느낌이 나네요~~
상큼한 느낌이 가득해서 기분전환이 필요할 때 먹으면 좋을 것 같아요~

▶틀 사이즈 Mold size : 15cm
▶재료
_ 레몬 커드 _
물 150g
레몬즙 120g
설탕 90g
옥수수전분 35g
무염 버터 30g
달걀노른자 35g
_ 레몬 케이크 시트 _
따뜻한 우유 170g + 레몬즙 8g
무염 버터 75g
설탕 100g
달걀 75g
바닐라익스트랙 1/2ts
박력분 190g
소금 1g
베이킹소다 4g + 레몬즙 8g
레몬 제스트
휘핑한 생크림 (생크림 100g + 설탕 10g)
▶레시피
1. 냄비에 물, 레몬즙, 설탕, 옥수수전분을 넣고 섞은 뒤 약불에 올려 걸쭉해질 때까지 저으며 가열한다.
2. 무염버터를 넣고 섞고 달걀노른자를 넣고 섞은 뒤 랩을 덮어 식힌다.
3. 따뜻한 우유에 레몬즙을 섞어 준비한다.
4. 무염버터를 부드럽게 풀고 설탕을 넣고 섞은 뒤 달걀을 2번에 나눠 넣고 섞고 바닐라익스트랙을 넣고 섞는다.
5. 박력분과 소금을 체 쳐 넣고 섞고 (3)을 넣고 섞은 뒤 베이킹 소다 + 레몬즙 섞은 것과 레몬 제스트를 넣고 섞는다.
6. 틀에 붓고 170도 예열된 오븐에서 45분 정도 구운 뒤 식히고 윗면과 밑면을 잘라내고 2장으로 잘라 준비한다.
7. 레몬 커드의 반은 짤주머니에 담고 남은 반은 휘핑한 생크림에 넣고 섞어 크림을 만든다.
8. 시트 한장 위에 크림을 바르고 다른 시트를 올린 뒤 옆면에 크림을 얇게 바르고 윗면을 평평히 정리한다.
9. 레몬 커드를 케이크 위에 짜고 애플민트, 레몬 제스트, 슈가파우더를 올려 장식한다.
