还有一个月就圣诞节咯。赶快尝试冷冻牛油曲奇饼干。做法简单直接,且一个面团可制做4种不同口味。今天采用了蔬果粉调出天然无色素的, 原味蔓越莓,抹茶巧克力粒,红丝绒奥利奥,和巧克力杏仁口味。面团冻硬后以切割方式来分饼胚子,快速方便。一刀切4种面团,切面平整,看到里面满满馅料,超疗愈舒服。烤出来的饼干外面酥脆,放进嘴里触碰口水化解,形成入口即化口感。原味牛油香加上蔓越莓酸甜,抹茶搭配巧克力粒苦甜衬托,红丝绒淡淡巧克力甜菜根香搭配奥利奥口感十足,巧克力搭配杏仁酥脆香,调和了各自独特的味道口感。适合当圣诞礼物,也适合当年饼,一箭双雕。
收藏方式:烤好彻底凉透,室温收密封容器保存。要新鲜7天内吃。

Today, I use vegetable and fruit powder to produce natural no coloring, Original Cranberries, Matcha Chocolate Chips, Red Velvet Oreo, and Chocolate Almond flavors. After frozen solid, the dough is divided by slicing, fast and convenient. Cut 4 kinds of dough in one knife swipe, flat neat cut sessions, full of fillings, super therapeutic and satisfying. Freshly baked cookies are crisp flaky on the outside, dissolve when contact with saliva, forming a melt in your mouth feel. Original butter fragrance with sweet and tangy cranberry, matcha with chocolate chips bittersweet contrast, red velvet with light chocolate beetroot fragrant paired with Oreo full of texture, chocolate with almond crunchy fragrant, each form their unique tastes and texture. Suitable as Christmas gift, as well as CNY Cookies. Kill two birds with one stone.

Baking ingredients:
Lemon Icebox Rounds
1 recipe Tender Tart Dough
2 tsp finely grated lemon zest
⅓ cup Turbinado or yellow-coloured decorator's sugar
Earl Grey Icebox Squares
1 recipe Tender Tart Dough
1 Earl Grey tea bag
Chocolate Icebox Pinwheels
1 recipe Tender Tart Dough
2 Tbsp Dutch process cocoa powder
Baking instructions for Lemon Icebox Rounds
1. Prepare the dough recipe, stirring in the lemon zest when adding the egg yolks. Shape the dough into logs that are an inch across and wrap in plastic wrap. Chill until firm, about 2 hours.
2. Preheat the oven to 325 F and line 2 baking trays with parchment paper.
3. Pour the turbinado sugar onto a plate. Unwrap the cookie logs and roll them in the sugar to coat. Slice the cookies about ¼-inch thick and place on the baking trays, leaving a ½-inch between them. Bake the cookies for about 15 minutes, until lightly browned on the bottoms. Cool the cookies on the tray and then store in an airtight container.
Baking instructions for Earl Grey Icebox Squares
1. Prepare the dough recipe, stirring in the tea from the tea bag when adding the egg yolks. Shape the dough into logs that are an inch across and wrap in plastic wrap, then flatten them on 4 sides to create a square shape. Chill until firm, about 2 hours.
2. Preheat the oven to 325 F and line 2 baking trays with parchment paper.
3. Slice the cookies about ¼-inch thick and place on the baking trays, leaving a ½-inch between them. Bake the cookies for about 15 minutes, until lightly browned on the bottoms. Cool the cookies on the tray and then store in an airtight container.
Baking instructions for Chocolate Icebox Pinwheels
1. Prepare the dough recipe, then remove half of the dough to a separate bowl. Stir the cocoa powder into that separate bowl of dough until incorporates. Shape each piece of dough into a disc and wrap in plastic wrap. Chill until firm, about 2 hours.
2. On a lightly floured work surface, roll out each piece of dough to a square about 8-inches across and just under a ¼-inch thick. Place the chocolate dough over the plain dough, trim the edges and carefully roll up, creating a spiral effect. Wrap the cookie log and chill until form again, about an hour.
3. Preheat the oven to 325 F and line 2 baking trays with parchment paper.
4. Slice the cookies about ¼-inch thick and place on the baking trays, leaving a ½-inch between them. Bake the cookies for about 15 minutes, until lightly browned on the bottoms. Cool the cookies on the tray and then store in an airtight container.
The cookies will keep for up to 4 days in an airtight container.

60g Unsalted butter
40g Powdered sugar
20g egg yolk
95g Cake flour
20g Almond flour

*Dried cranberries cookie dough(20cookies)
60g Unsalted butter
40g Powdered sugar

*Cocoa White chocolate chips cookie dough (20cookies)
60g Unsalted butter
40g Powdered sugar

*Purple sweet potato powder raisin cookie dough(20cookies)
60g Unsalted butter
40g Powdered sugar
20g egg yolk

【Directions】
1. Mix butter and powdered sugar well in a large bowl.
2. Add egg yolk and mix.
3. Sift in cake flour, Almond flour, mix.
4. Divide cookie dough into 4 even portions
5. Take the 1st cookie dough. Add Dark Chocolate chip and mix. Wrap the dough with plastic wrap, leave it in the fridge for 1 hour.
6. Take the 2nd cookie dough. Add dry cranberries and mix. Wrap the dough with plastic wrap, leave it in the fridge for 1 hour.
7. Take the 3rd cookie dough. Add Cocoa powder and white chocolate chips, then mix. Wrap the dough with plastic wrap, leave it in the fridge for 1 hour.
8. Take the 4th cookie dough. Add purple sweet potato powder and raisin, then mix. Wrap the dough with plastic wrap, leave it in the fridge for 1 hour.
9. Shape dough into a cylinder with 4cm(1.6inch) diameter.
10. Wrap in plastic wrap and freeze for at least 1 hours.
11. Slice the dough into 7mm (0.3 inch) thick.
12. Place them on a baking sheet lined with parchment paper.
13. Pre-heat oven to 338 °F/170℃. Bake for 15 minutes.
14. Cool the cookies on the baking sheet or a wire rack.
