How To make Les Oreilles De Cochon (Pigs' Ears)
2 c All-purpose flour
1/4 ts Salt
1 ts Sugar
4 tb Butter
2 Eggs
1 tb Water
1 ts Apple cider vinegar
Shortening and/or lard For frying 1 c Cane or corn syrup
1/2 c Sugar
Sift the flour, salt, and sugar together. Rub in the butter with the fingertips as for pie dough. beat the eggs with the water and vinegar, then pour over the flour mixture and beat well. Turn the dough out on a lightly floured surface and knead it 2-3 minutes until smooth. Chill for 30 minutes; divide into 12 pieces. Roll out very thin, like pasta dough, into rough 5-inch squares. Cut each square in half on the diagonal. Fry the pieces in single layers in about 1/2 inch of hot fat at 360; lard is traditional, but you may use shortening. Turn once when golden brown. In the meanwhile, combine the syrup and 1/2 cup sugar in a saucepan. Cook to the soft crack stage, about 270. Drain the fried pastries on brown paper and drizzle about 1 tablespoon of the syrup over each. Eat at once. SOURCE: Biscuits, Spoonbread, and Sweet Potato Pie (pg. 251) -----

I had some pig ears left over and I had to give it one more go before we never let these ears in the door again.
Today I will show how to prepare and cook pig ears. The pig ears were prepared as you would fry chicken. Seasoned egg batter, seasoned flour, then batter the ear strips.
First: Steam the pig ears for 1.5 hours with onions, celery and chives- then flatten while hot.
I thin cut the pig ears and egg washed them. They were then dipped in the batter. Then the air fryer for 20 mins.
Be sure to spray the Pig Ear Strips/Wedges/Fries.

3 Pig Ears (approx. 1/2 lb)
2 Stalks Green Onion
200g Ginger
1 bag Oriental Spice
1/2 cup Soy Sauce
1 tsp Salt
1 tsp Chicken Seasoning
2 tbsp Cooking Wine
1 tsp Dark Soy Sauce
100g Rock Sugar
3 cups Water
120g Garlic

Pig Ears Recipe:
Ingredients:
1 lb of pig ears
1 cup of chicken stock
1 cup of tomatoes sauce
2 tbsp of sofrito
1 packet of sazon
1 tsp of adobo
2 tbsp of green olives
1 bay leave
1 potato
1 carrot
1 tbsp of olive oil
black pepper to taste
Instructions:
1. add olive oil to pot over medium high heat
2. saute sofrito for about 1 minute or so
3. add pig ears and the rest of the ingredients
4. cook on instant pot or pressure cooker for 15 minutes, on stove top 45 minutes
5. serve with rice and enjoy it
