Six or seven boneless skinless chicken thighs, 1 1/2 teaspoons of paprika, 1 teaspoon of garlic salt, half a teaspoon of ginger 1/4 of fine chopped basil
To make the marinade now you need quarter cup of chicken stock 1/3 cup of lime juice, 1 teaspoon of white wine vinegar 1 teaspoon of soy sauce 1 tablespoon of peri-peri sauce 2 tablespoons of apricot brandy

Tequila-Lime Glazed Chicken Thighs

Ingredients
• 2-3 lbs. bone-in, skin-on chicken thighs
• BBQ Rub of choice as desired
• ½ C tequila
• 2-3 large limes, juiced
• 1 shallot, minced
• 2 cloves garlic, minced
• Fresh cilantro, chopped
• ¼ C heavy cream
• Spiceology Black Magic Seasoning (swap with favorite blackening seasoning
• 1/2 stick of butter
For the Tequila-Lime Sauce:
1. Place a saucepan over medium-high heat. Sauté the garlic and shallots in lime juiced until tender. Add in the heavy cream and bring to a simmer. Once the sauce has reduced, remove the saucepan from the heat and add in the butter, cilantro, and black magic seasoning. Stir the ingredients until well incorporated.
For the Chicken:
1. Preheat the grill to 400 degrees. Meanwhile, trim the chicken thighs of any excess fat or skin, discarding waste as needed (I try to trim up the chicken thighs so that the shape of each is consistent. This helps to ensure an even cook). Next, season the chicken with your favorite BBQ rub of choice. Repeat this step until all thighs have been seasoned.
2. Once the grill has preheated, add the chicken skin-side up. Allow the chicken to cook until the internal temperature registers ~150-160 degrees. At that point, liberally apply the Tequila-Lime sauce to the chicken thighs using a pastry brush until all the thighs are thoroughly coated. Continue to cook until the internal temperature registers at least 165 degrees and the glaze has set. Once this occurs, set the chicken thighs aside and shut off the grill.
Tip #1: I prefer dunking the chicken in the sauce to ensure a more even coating.
Tip #2: Chicken thighs are very forgiving. I often cook them to 180-190 degrees to help create a nice, crispy skin.
To Finish:
1. Add the chicken thighs to serving plates with sides of choice and top with remaining tequila-lime sauce (as desired). Enjoy!

Citrus Chicken

Ingredients
4 pounds bone-in chicken thighs
3/4 cup freshly squeezed orange juice, about 2 oranges
2 tablespoons grated orange zest
1 teaspoon salt
2 teaspoons freshly cracked black pepper
1 teaspoon chiffonade fresh mint leaves
1 1/2 tablespoons chiffonade basil leaves
3 tablespoons white balsamic vinegar
3 tablespoons minced shallots
1 tablespoon celery seeds
Glaze, recipe follows
Glaze:
1 tablespoon olive oil
1 tablespoon minced shallots
1 teaspoon minced ginger
1/2 cup orange marmalade (look for marmalade with small rinds)
1/4 cup sweet chili sauce
1 tablespoon white balsamic vinegar
1/4 cup reserved marinade, strained
Directions
Combine all the ingredients in a large resealable plastic bag and refrigerate for 6 to 8 hours.
Preheat the oven to 350 degrees F.
Remove the chicken from the marinade, reserving 1/4 cup for Glaze and put the chicken in a 13-by-9-inch pan and bake for 45 minutes. Baste with the Glaze, turn the pieces over and bake for an additional 15 to 25 minutes, basting every 7 minutes. Remove from the oven and arrange the chicken on a serving platter.
Glaze:
In a small saucepan, over medium-high heat, add the olive oil. When the oil is hot add the shallots and ginger and saute for 3 minutes. Add the remaining ingredients and reduce heat to a low simmer. Cook for 15 minutes. Baste the chicken with the glaze after 45 minutes.

INGREDIENTS
For the Rose's Lime Glaze:
1 1/2 cups (355ml) Rose’s lime juice (or 1 cup/240ml freshly squeezed lime juice and 1 ⁄ 2 cup/120ml honey)
1 1/2 cups (355ml) water
1 head garlic, cloves peeled and smashed
2 to 3 Fresno chiles, stems removed, cut in a few chunks
3 tablespoons vegetable oil
2 teaspoons kosher salt
1/2 teaspoon ground nutmeg
For the Chicken Wings:
4 1/2 pounds (2kg) chicken wings, wingtips removed, drumettes and flats separated
1/3 cup (80ml) vegetable oil
2 teaspoons kosher salt
3/4 cup (15g) cilantro leaves, chopped, for serving
