How to make lemon pickle
1. To a heated pan, add enough oil. 2. To the heated oil add 1 tsp mustard seeds and a little bit of asafoetida and let the mustard crack. 3. Now add the cut lemon pieces and add some salt as needed. 4. One the lemon has cooked enough add 1 tbsp of chilli powder and mix well 5. Prepare a powder with roasted mustard and fenugreek seeds in equal quantities and add 1 tbsp of this powder the pickle and mix well 6. Now the lemon pickle is ready to be served. You can preserve this lemon pickle in air tight container for up to 2 months.

Ingredients - 20 limes - 100 gms of salt - 1 tsp of turmeric powder - 5 Tbsp of oil - 2 tsp of mustard seeds powder - 1/2 tsp of fenugreek seeds powder - 1/2 tsp of asafetida - 60 gms of red chilli powder
Procedure - Cut 12 limes into 8 pieces each - Add juice extracted from 8 limes - Add 100 gms of salt - Add 1 tsp of turmeric powder - Mix well - Cover with lid and set it aside for 15 days - Mix once a day - After 15 days, mix limes once. - To a pot on medium flame, add 5 Tbsp of oil - Add 2 tsp of mustard seeds powder - Add 1/2 tsp of fenugreek seeds powder - Add 1/2 tsp of asafetida - Stir and saute for a minute - Turn the flame off and let it cool down - Add 60 gms of red chilli powder - Stir to mix - Add oil mixture to limes - Mix and lime pickle is ready
