Weeknight Turkey Bolognese

WEEKNIGHT TURKEY BOLOGNESE
Yields 4 to 6 Servings
1 pound dried capellini (angel hair) or thin spaghetti or spaghetti
1 pound lean ground turkey breast
1 yellow onion, diced
3 garlic cloves, minced
2 to 3 tablespoons olive oil, plus more for drizzling
1/2 cup red wine (optional)
1/2 tablespoon dried Italian seasoning
1- 28 ounce can of crushed San Marzano tomatoes or 1- 24 ounce jar of spaghetti sauce
1 tablespoon unsalted butter
parmesan cheese for grating over the top
torn fresh basil leaves to garnish (optional)
kosher salt
freshly cracked black pepper
Bring a large pot of salted water to a boil. Cook your pasta according to package directions when your pasta is in the last 10 minutes of simmering.
While the water is boiling and your pasta is cooking, get your bolognese going. Preheat a large dutch oven or skillet that has high sides over medium high heat. Add your olive oil and let it get hot and shimmery, but not smoking. Add your onion and a pinch of salt and saute until translucent, about 4 minutes. Add your garlic and dried herbs and stir for 30 seconds. Deglaze with your wine, stirring to evaporate and cook out the alcohol, about 1 to 2 minutes. Add your turkey, breaking your it up with the back of a wooden spoon or spatula. Season with salt and pepper. Stir and break your turkey apart constantly until your turkey is completely cooked, about 5 to 7 minutes. Add your tomatoes and season salt and pepper. Bring to a soft boil and lower the heat to low, allowing to simmer for 10 minutes, stirring every few minutes so the sauce doesn't stick to the pan. Add your butter and stir to combine. Turn off the heat.
When your pasta is done, drain (reserve a cup of pasta water) and add to your sauce, directly in the pan. Give it all a toss. If you feel you need a little moisture, add a 1/4 cup of pasta water at a time, stirring. Transfer to a serving bowl. Drizzle the entire dish with olive oil. Top with grated parmesan and torn fresh basil leaves.

Today I would like to share with you my Pappardelle Bolognese recipe. This is a little different from the original one, but in the future I will do the more traditional version.

MY FAVORITE SPAGHETTI | THE GOLDEN BALANCE

My Favorite Spaghetti ????
10oz Spaghetti
4 Large tomatoes
1 medium onion
1 jalapeño
1/4 cup olive oil
5 cloves garlic
Salt to taste (I did around 1 Tbsp)
Spices I used: 1tsp of garlic , onion, paprika, chili, cayenne
1 lb ground beef (optional)
Simmer the sauce down to about 1/2 the starting amount. It took me about 20-30 minutes
Finish with cheese if you’re feeling wild.
