How To make Lisa's Chicken Chow Mein
1 package fresh chinese noodles
1 chicken breast
cut into thin strips
1 tablespoon soy sauce
1 tablespoon rice wine
1 tablespoon cornstarch
bok choy or other greens, such as spinach :
thinly sliced bean sprouts washed and drained celery :
thinly sliced* carrots julienned* shiitake mushrooms :
julienned* 1/3 cup soy sauce
1 tablespoon oyster sauce
1 tablespoon black bean paste**
1 pinch sugar
* Optional **If possible, try to get the authentic kind sold in Chinese or Korean markets. These have the best flavor. But if all you can get a hold of is the
supermarket variety, that's all right. Or it can be omitted altogether, if there is none to be had in your area. 1. Cook the noodles in boiling water until done. Drain. 2. Marinade the meat in soy sauce, rice wine, and cornstartch for at least 30
minutes. 3. In a measuring cup, mix together the soy sauce, oyster sauce, black bean paste, and sugar. Set aside. 4. Heat a large wok on high. When the wok is smoking add the oil. Stir fry the vegetables briefly, in batches if necessary, and transfer to a bowl. 5. Reheat the wok and add more oil. Add the marinated chicken and stir fry until the meat is cooked. Add the soy sauce mixture in step 3 and cook until boiling. 6. Add the noodles and vegetables to wok and toss well to coat. Take off the
heat. Note: It is important to have a good heat source to achieve good results in chinese cooking. I have found that ordinary kitchen stoves leave something to be desired when the recipe calls for stir frying over high heat. If possible, use an outdoor cooking device, such as propane gas stoves designed for outdoor cooking. (use it outdoors, of course!)

3 blad Vitkål
1/2 röd paprika
6st Minimajs
Salladslök en hel knippe
Salt till pastavattnet
Jordnötsolja
Marinad till kycklingen:
2 tsk kikkoman soya
1 msk risvinäger
1/2 tsk Chineese five spice
1/2 tsk bikarbonat
1 nypa vitpeppar
2 msk vatten
Kryddning till wooken:
1 röd chili
1/2 msk finhackad ingefära
1 msk finhackad vitlök
Wooksåsen:
1 dl kycklingbuljong
2 msk Kikkoman soya
1 msk Mörk mushroom soya
1 msk Thai mushroom soya
2 msk ostronsås
1/4 tsk sesamolja
1 nypa vitpeppar
Börja med kycklingen. Skiva den tunt blanda marinaden, blanda ihop och ställ åt sidan.
Förbered sedan wooksåsen och ställ åt sidan.
Sätt på pastavattnet
Finhacka sedan chili, vitlök och ingefära, lägg i en liten skål och ställ åt sidan. OBS, TVÄTTA HÄNDERNA NOGA EFTER DETTA
Skär sedan grönsakerna till wooken
Lägg i nudlarna när vattnet kokar och sätt på plattan till wooken på hög värme, låt nudlarna koka i 3 minuter, de ska inte bli klara.
Häll av nudlarna, fyll grytan med kallvatten för att stoppa tillagningen. Häll av vattnet och blanda i lite olja.
Wooka kycklingen tills den är klar, lägg på en tallrik och ställ åt sidan.
Skölj rent wookpannan, ställ den på spisen och låt värmen avdunsta vattnet
Ha i lite olja och ha i chili, vitlök och ingefära blandningen. Efter ca 20-30 sekunder har du i resten i följande ordning. OBS, rör hela tiden.

Vitkål
Paprika
Minimajs
Salladslök
Nudlarna
Wooksåsen
Och sist kycklingen
Blanda om allt ordentligt så du får en jämn fördelning, klart att servera.

Today, we are making Chi You Huang Chow Mein (豉油皇炒面). Chow (炒) is stir fry. Mein(面) is noodles. Chi You Huang (豉油皇) means “the king of soy sauce”. I know it sounds weird, but it is trying to describe that if you cook this right, you can maximize the flavor of the soy sauce and bring this dish to the king level. So this is basically vegetable stir fry noodles that are seasoned with soy sauce.
INGREDIENTS (1 portion)
150 grams (5.3 oz) of fresh egg noodles or 100 grams (3.5 oz) of dry egg noodles
40 grams 1.4 oz of bean sprouts
40 grams 1.4 oz of carrot
1/4 of a medium-size onion about 40 grams / 1.4 oz
40 grams 1.4 oz of garlic chives
1 clove of garlic
A drizzle of olive oil to add to the water
1 liter of water to pre-cook the noodles
1-2 tbsp of oil to stir fry
1 tbsp of light soy sauce (Amazon Link -
1 tsp of oyster sauce (Amazon Link -
1 tsp of dark soy sauce (Amazon Link -
1/4 tsp of sugar
INSTRUCTIONS
Bring 1 liter of water to a boil. Add a drizzle of olive oil, then toss in 100 grams of dry egg noodles (or 150 grams of fresh egg noodles).
Turn off the heat immediately, let the noodles soak in the hot water. Gently loosen up all the noodles with a pair of chopsticks. Dry egg noodles will take about 3-5 minutes; fresh egg noodles will need 2-3 minutes depending on the thickness.
Take out the noodles and spread them on a rack for at least 10 minutes. The rest of the heat will help to evaporate the excess moisture.
Cut the noodles into 6 inches long pieces with a pair of scissors.
Julienne some vegetables. I used 40 grams (1.41 oz) of bean sprouts, 40 grams (1.41 oz) of carrot, 40 grams (1.41 oz) of garlic chives, 1/4 of an onion, and 1 clove of garlic.
In a sauce bowl, mix 1 tbsp of soy sauce, 1 tsp of dark soy sauce, 1 tsp of oyster sauce and 1/4 tsp of sugar.
Turn the heat to high. Heat your wok until smoking hot. Add 2 tbsp of oil. Swirl the oil around to cover the bottom to create a non-stick layer. Add in the noodles. Use two pairs of chopsticks to fluff the noodles for a couple of minutes.
Add the vegetables. Pour in the sauce in batches. Stir to combine all the flavor. Turn off the heat and serve the noodles on the plate.

HOUSE SPECIAL CHICKEN CHOW MEIN
It's called house special chow mein because you can put whatever ingredients you want to. Your family and friends will be impressed when you serve this House Special Chicken Chow Mein. Be sure to make extras because everyone will go for second helpings.
1 lb. (454 gr) fresh chow mein noodles
1 tablespoon sliced ginger
1/2 cup sliced onions
1/2 cup sliced red pepper
1/2 cup sliced green pepper
3 cups Shanghai bok choy or other vegetables
1 1/2 cups cooked chicken or other chicken
1/2 teaspoon salt
1 teaspoon sesame oil
1 cup water
1 to 2 tablespoon light soy sauce
1 to 2 tablespoon Chinese oyster sauce
1 tablespoon cornstarch in 1/3 cup water
Boil the chow mein noodles 30 to 60 seconds. Rinse noodles in cold water.
Preheat a wok at medium heat. Put 3 to 4 tablespoons cooking oil in wok. Stir fry noodles to desired crispness. Put noodles onto a plate.
To stir fry toppings, preheat a wok at medium heat. Add 3 tablespoons cooking oil. Add ginger and onions. Briefly stir fry. Add salt and sesame oil. Add red and green peppers. Add Chinese veggies. Stir fry for a minute or two. Add water and do final stir fry. Add cornstarch solution to thicken sauce. Add cooked chicken and mix in. Pour topping over noodles. Enjoy!
