This recipe will make two pies if you get the smaller pie shells. If you get the large deep dish pan, then it will only make one. 8 ozs cream cheese 1 cup powdered sugar 1 large container cool whip ¾ cup crushed pineapple 2 graham cracker crust Mix the cream cheese, sugar, and cool whip until smooth Fold pineapple in with a spoon Put mixture in the pie shells Sprinkle graham cracker crumbs on top Refrigerate for two hours Serve and enjoy !!!

Note: If I do a do-over I would still split the gelatin. 1/2 packet mixed with the cream cheese and and then use a whole packet for the topping. Better to have more than not enough.
Pineapple, Gelatin and Cream Cheese Pie Make and chill a graham cracker crust. Drain a 1 lb., 4 1/2 oz. can Dole Pineapple Chunks -- save the syrup -- chill the pineapple. Add water to pineapple syrup to make one cup, bring to boil, then stir into 1 package lemon gelatin until completely dissolved. Gradually blend half of hot gelatin into an 8 oz. package of cream cheese warmed to room temperature. When smooth, pour into chilled crust, chill until set. Arrange pineapple on top and spoon remainder of gelatin over all, chill. A spectacular way to enjoy Dole Hawaiian Pineapple!

SPREAD PINEAPPLE FILLING IN BOTTOM OF PIE SHELL. POUR FILLING OVER. IT WILL PROBABLY BE CURDLED BUT THAT'S FINE. SPRINKLE WITH CINNAMON BAKE AT 400 DEG. FOR 10 MIN. AND REDUCE TO 325 AND BAKE FOR 50 MINUTES. ENJOY!
