How To make Lowfat Muffins

IN A LARGE BOWL MIX WELL:

banana, mashed

cup
applesauce, unsweetened
1/4
cup
molasses
1/4
cup
raspberry preserves/jam
1
cup
soy/rice milk
1/8
cup
brown sugar
1
cup
raisins
2
cup
raw bran
 
 

 
 

IN A SMALL BOWL SIFT:


1 1/4
cup
flour
3
teaspoon
baking powder
1
teaspoon
baking soda
1/2
teaspoon
salt
1/4
teaspoon
cinammon

Directions:
Add to dry ingredients to wet ingredients. Mix well. Pour into greased muffin tins, bake at 400 degrees F for 20 minutes.
Notes: original called for 1/4 cup brown sugar. With the raspberry preserves, an 1/8 of a cup is plenty. You could also substitute raspberry with any other flavor of jam/preserve.
