Macaroni and Tomatoes
This is a quick video on making macaroni and tomatoes. One of my all time favorites from my childhood.
Macaroni & Tomatoes: How to Make a Simple and Easy Appalachian Staple
In these trying times, my granny and I want to share a very simple, affordable, yet delicious recipe from our Appalachian heritage: Macaroni & Tomatoes! It’s so simple, that you probably have all the ingredients at home already!
- prepare macaroni pasta; in this recipe, we cook a 16oz bag of rice noodles
- pour a can of tomato sauce into a separate pot; we use a 28 fl oz can of seasoned tomato sauce, but it doesn’t have to be seasoned
- create a thickener for the sauce by stirring two tablespoons of corn starch with 1/2 cup of water in a separate cup
- heat the tomato sauce to just below a boil and gradually stir in the thickener
- add in a sweetener of your choice to taste to the sauce; in this recipe, we stir in a teaspoon of stevia
- pour sauce over macaroni and stir until sauce is evenly distributed over the noodles
- when serving, add salt and pepper to taste
The sauce is also wonderful over warm cornbread or biscuits!
