How To make Madam Russell Baked Beans
1 pound dried white pea beans
1 medium onion
diced
1/2 cup molasses
1/2 teaspoon dry mustard
1/4 cup brown sugar :
packed
1 teaspoon salt
1/4 pound salt pork -- lean, diced
Pick over beans and rinse. Place in a large bowl; add water to cover. Let stand overnight; drain. Combine beans and onions in a large saucepan; add water to cover; heat to boiling; cover. Simmer 45 minutes, or until skins of beans burst when you blow on several in a spoon. Drain liquid into a small bowl. Measure 1 cup of the bean liquid and combine with molasses, mustard, brown sugar, and salt in a bowl. Layer half of the salt pork and all of the beans into an 8 cup bean pot. Pour molasses mixture overtop; add just enough more saved liquid to cover beans. Top with remaining salt pork, pressing down into liquid; cover. Bake at 300F 4 hours; uncover. Bake 1 hour longer, or until beans are deep brown, tender, and as dry as you like them. (After 2 hours baking, check beans, and if they seem dry, add more saved bean liquid to keep them moist.)

While testing our new Omelette Maker, we knew that it makes delicious, healthy meals…but what about when you fancy something indulgent?
You could always do something like us, and (accidentally) make our twist on a fantastic, French classic.
This recipe was an accident. We were stood in the kitchen with leftover ingredients; not enough to keep but also too much to dispose of (not to mention it was all fresh food so it couldn’t be donated!).
While this may not be the healthiest of meals, it is the ultimate comfort dish.
With gently flavoured eggs binding together bread, ham, and cheese, you’ll wonder why we didn’t name our Omelette Maker the ‘Everything Maker’ – it really does cook so much more than omelettes!
We’ve provided the nutrition at the bottom of this blog – and we think you’ll be pleasantly surprised with just how low in calories this actually is!
This is a definite crowd-pleaser, with kids and adults alike enjoying it.
To make this healthier, feel free to swap the white bread for brown, the cheese for quark or cottage cheese and you’ll have something just as yummy.
Ingredients:
1 tspn chilli flakes
4 slices medium bread (we used white but feel free to use brown)
4 medium eggs
125 g mild cheddar cheese
3 slices lean ham, diced
Pinch of salt and pepper
0.5 tspn garlic powder
Frylight
Method:
Crack your eggs into a jug or large bowl and add the chilli flakes, garlic powder, salt and pepper and whisk them all up.
Slice your bread into small squares, before placing into the bowl with the eggs.
Add your ham and cheese to the bowl, and stir well so the bread is coated and the ham and cheese is well dispersed.
Set aside for a few minutes so the bread can soak up the egg mixture.
Switch on your omelette maker, spray with some Frylight and allow to heat up.
Scoop the required amount of mixture into each pan, close the lid and allow to cook for 12-14 mins, until golden brown.
Leave to cool, and serve with your favourite salad or (for the ultimate comfort) baked beans.
