Maple Carrot Cake Cupcakes with Pineapple & Pecans | with Cream Cheese Frosting

These are the most delicious carrot cake cupcakes, sweetened with pure maple syrup and topped with creamy, cream cheese frosting! They’re dotted with bits of sweet, crushed pineapple, crunchy pecans and grated carrots. I love these cupcakes because they’re not too sweet and the creamy frosting perfectly complements the cake! These carrot cupcakes are perfect for springtime holidays such as Easter or Mother’s Day, but don’t wait all year to enjoy them! They’re great for any occasion!
Cream Cheese Frosting Video:
INGREDIENTS:
1 cup (240 ml) buttermilk
¾ cup (178 ml) light cooking oil, I used canola
1 cup (240 ml) pure maple syrup
4 large eggs
1 tsp vanilla extract
2 ½ cups (313 g) all-purpose flour
2 tsp (10 g) baking soda
2 tsp (8 g) baking powder
¼ tsp salt
1 tsp ground cinnamon
1 cup (110 g) grated carrots, about 2 large carrots
6 oz (170 g) crushed pineapple, drained
½ cup (55 g) diced pecans
For Cream Cheese Frosting:
16 oz (454 g) cream cheese, softened
2 cups (454 g) unsalted butter, softened
3 cups (360 g) confectioner’s sugar
1 tsp vanilla
Pinch of salt

Amy Roloff Making Spice Bundt Cake with Maple Glaze Frosting
I like spice cake. The warm spices of cinnamon, nutmeg and ginger have this rustic comforting soft delicious taste. And it’s a cake I like anytime of the year and not just the Fall time. And if you’re looking for a good piece of sweetness to go with coffee this is the cake. A piece is good anytime of the day too.
I made this cake with un-sweeten applesauce for the flavor and to provide moistness. If you make the cake with buttermilk it will also give the cake the moistness and tenderness as well
Instructions:
3 cups of Flour
1 ½ Tbsp Baking Powder
1 Tbsp Cornstarch
2 Tbsp Cinnamon
1 ½ tsp Ginger
½ tsp Nutmeg
½ tsp Salt
¾ cup unsalted Butter
1 ½ cup Sugar
½ cup Brown Sugar
4 Eggs, room temperature
½ cup oil
2 tsp Vanilla
1 2/3 cups Applesauce (or substitute with Buttermilk)
1/3 cup Sour Cream
Glaze:
* 1 ½ cups Powdered Sugar
* 3 oz of Cream Cheese
* ½ tsp Vanilla
* 3 Tbsp Butter, room temperature
* 2 Tbsp good Maple Syrup
Directions:
* Preheat the oven to 350 degrees. Prep Bundt pan by greasing the pan, making sure to grease in the ridges and then lightly flour.
* Whisk together the flour, baking powder, spices, cornstarch and salt until combined.
* In a mixer, with the flat paddle, cream the butter until smooth. Add in the sugar and brown sugar and mix until well combined. Add eggs, beating one at a time till combined before adding in the next egg.
* In a bowl, stir together the applesauce and sour cream (or buttermilk), oil and vanilla until completely mixed.
* In the bowl with the butter and sugar, alternate adding in the flour and applesauce mixture, 1/3 each, mixing until just combined, after each one and ending with flour. Be sure not to over mix the batter.
* Pour into the prepared bundt pan. Using a spatula to even out the batter, Gently tap the pan on the counter to ‘pop’ out any air bubbles. Bake in preheated oven for
45 – 55 minutes. Check at 45 minutes. If the middle of the cake looks soft then bake for another 5 minutes. After 5 minutes, check with a toothpick or sharp knife and if clean take the cake out of the oven. Let the cake rest for about 15 minutes before using a knife to loosen the cake around the sides and edges. Continue to cool for another 30 minutes before removing the cake.
* For the glaze. In a bowl, mix together the cream cheese and butter till combined. Add in the powdered sugar and mix until smooth. Add in the vanilla and maple syrup and stir until smooth. Adjust for the consistency desired by adding in more powdered sugar and/or butter or milk. Drizzle over the cool cake.

Maple Cake with Chocolate Fudge Frosting (Low salt!)
Today, we show you how to make a sweet and tasty dessert. The cake itself is sweetened with maple syrup and the frosting is made from avocados. Low in salt, absolutely yummy!
*All the ingredients we used are little to no sodium
Recipe
Serves: 16
Cake Ingredients:
8 tablespoons (1 stick) unsalted butter, room temperature
2 3/4 cups all-purpose flour, sifted
2 cups pure maple syrup
3 large eggs
1 tablespoon baking powder
1 teaspoon ground ginger
1 cup milk
1 teaspoon pure vanilla extract
Frosting ingredients:
4 avocado's, pitted
1 cup unsweetened cocoa powder
2/3 cup honey
4 tablespoons cacao butter, melted
Cake Directions:
1. In a large bowl, sift together the flour, baking powder and ginger. Set aside.
2. Preheat the oven to 350F. Prepare 2 round baking pans using baking spray or using wax paper cut out the circles and place on the bottom of the pans.
3. Add the butter in a mixing bowl and beat until creamy. Then add the maple syrup and beat until creamed together.
4. Add the eggs and sifted flour to the mixing bowl and beat until well combined. Then add the vanilla and milk and mix until well combined.
5. Divide the batter evenly into the 2 round 9 baking pans. Place in the oven at 350F for 40 minutes, rotating once to be sure they bake evenly. Bake until they are a little brown on top and toothpick stuck in the middle comes out clean.
Frosting Directions:
1. In a food processor add the avocado's, unsweetened cocoa powder, honey and melted cacao butter. Blend until smooth making sure everything is well incorporated.
Assembly Directions:
1. Let the cake cool on a rack for 15-20 minutes. Then remove the cake's from the pan one layer right side up on a plate and one on the cooling rack. Allow to cool thoroughly.
2. Ice top of cake on the plate.
3. Place second layer on top of iced layer. Then ice top of second layer including the sides.
Eat and enjoy!
