Join me on this chilly spring day as I bake. Yes, I baked. And I filmed it. I've been attempting to film this recipe for months, never liking the results, but I think I managed this time. My reliable iPhone 6S held on to capture it all. I also made my super simple Vanilla Bean Sugar & Vanilla Bean Maple Syrup with the leftover vanilla bean used in the chocolate cake. Zero-waste & delicious.
Vanilla Bean Stick: Once the vanilla bean stick is sliced in half length-wise, the inside PULP is scraped, you can add to all kinds of baking for a rich REAL vanilla flavor. What remains is the outer layer, THE STICK, & it has much use. The vanilla stick can be placed in sugar, maple syrup, or if you like, honey for months & months. Just keep refilling the jars/bottle with sugar, maple syrup, or honey, even your favorite liquor. The vanilla beans will keep.
CHOCOLATE CAKE:
It is only recently that I've come to appreciate & take the time to enjoy activities such as baking. In the past, I would bake but rush through the process. I'm now taking the time to enjoy the process of everyday tasks & baking is one of them. For me, this the definition of slow living. Being present for the people around you, including the tasks at hand. I don't have an extensive baking repertoire, but this CHOCOLATE CAKE recipe is a family favorite. The best not too sweet & moist chocolate cake. Easiest homemade chocolate cake ever.
I also like how all the ingredients are wholesome & straightforward; best of all, no electrical equipment is required. A whisk, a wooden spoon is all you need. Chances are, you already have all the ingredients in your pantry.
Simple Chocolate Cake Ingredients:
• Butter for baking pan.
• 1 1/2 cups light brown sugar.
• 1/2 cup vegetable oil.
• 1/2 cup milk (you can use your favorite milk, I use Oat Milk)
• 2 large eggs.
• 1 tsp vanilla.
• 1/2 vanilla bean, scraped (optional).
• 1/2 tsp salt.
• 1 1/2 cups all-purpose flour PLUS,
• 1 TBSP all-purpose flour.
• 2 tsp baking soda.
• 2 tsp baking powder.
• 1/3 cup Dutch-processed cocoa powder.
• 3/4 cup boiling water.
• SIFT ALL DRY INGREDIENTS to ensure a smooth batter.
Directions:
1) Preheat oven to 350 degrees F.
2) Butter & lightly flour a 10-inch pan.
3) In a large bowl, beat all the ingredients together *EXCEPT* the boiling water with a whisk or wooden spoon until no lumps remain. I use a whisk just to make sure all lumps are gone.
4) Add the boiling water & stir until smooth.
5) Scrape batter into the prepared pan & tap the pan on the counter to remove any air pockets.
6) Bake the cake for 30-35 minutes or until the cake springs back when lightly pressed in the center & cake tester inserted in the center comes out clean.
7) Let cool in the pan for 10 minutes.
8) Remove cake from pan & cool completely on a wire rack.

Maple Breakfast Cake Recipe - Glen And Friends Old Cookbook Show
Today we delve into a little culinary history from the maple sugar shacks of Ontario. Breakfast Cake? I guess that's a thing - Even if you don't eat this cake for breakfast, it's a solid maple cake recipe.
Sift together
1 ½ cups sifted pastry flour
½ cup whole wheat flour
4 teaspoons baking powder
1 teaspoon salt
¼ teaspoon cinnamon
1/8 teaspoon nutmeg
Combine
1 egg, beaten
⅔ cup maple syrup
⅔ cup milk
1 ½ teaspoons melted butter
Add to dry ingredients. Turn into a greased 9-inch pan and sprinkle top with cinnamon and maple sugar. Bake 35 minutes at 400º.
