How To make Vermont Maple Cake
2 c Flour
3/4 c Sugar
3/4 c Brown sugar; packed
3 ts Baking powder
1 ts Salt
1/2 c Vegetable oil
7 Eggs; separated
3/4 c Water
2 ts Maple flavoring
1/2 ts Cream of tartar
1 c Walnuts; chopped
1 c Real maple syrup
1/2 c Walnuts; toasted; chopped
Whipped cream (opt) In large bowl of electric mixer, combine flour, sugars, baking powder and salt. Mix until blended. In another bowl, combine oil, egg yolks, water and maple flavoring. Turn mixer on medium speed. Add liquid ingredients to dry ingredients. Beat 1 minute. In large metal bowl (not plastic), beat egg whites until foamy. Add cream of tartar. Whip at high speed until stiff peaks form. Pour batter over egg whites. Fold together gently until blended. Fold in 1 cup of chopped nuts. Pour into ungreased 10" angel food pan. Bake at 325~ for 55 minutes. Increase oven temperature to 350~. Bake 10 minutes longer until top springs back when touched. Cool upside down.
Remove from pan. Bring maple syrup to boil in a medium saucepan. Lower heat. Simmer 15 minutes or until almost reduced to half. Drizzle hot syrup over cooled cake. Sprinkle with toasted walnuts. Decorate with whipped cream. -----

How to Make MAPLE CREAM (1-Ingredient Recipe)
With a good quality pure maple syrup, candy thermometer, saucepot and a wooden spoon, you can make naturally sweet maple cream! Also known as maple spread or butter. One of the best tips I can give you is never to make maple cream when you’re in a rush!
It takes time to boil the syrup and then cool it to the right temperature before you start the 30-minute stirring process. With some patience, you will transform this 1-ingredient recipe into a beautiful maple cream. If you’re vegan, this is an excellent honey alternative.
CAUTION: Boiling syrup is extremely hot!

Maple Upside Down Cake
Recipe from Sadie Coon, Fairfield, VT and Savannah Kittell-Mitchell, Sheldon, VT
1 cup real maple syrup
1 cup walnuts
1 stick butter
1 cup sugar
2 eggs
1/2 teaspoon salt
2 teaspoons baking powder
1 1/2 cups flour
1/2 cup milk
1 teaspoon vanilla
Grease a 9-inch square pan. Put syrup and walnuts in bottom of pan. Cream butter and sugar. Add eggs. Mix well. Add dry ingredients alternately with the milk and vanilla. Pour cake batter carefully over the syrup and nuts. Bake in a 350 degree over for 40 minutes. Remove from over and let rest 15 minutes before attempting to turn out of pan, or serve as a pudding, right from the baking pan.
