How To make Merry Mallow Fudgies
1 Colored mini marshmallow
2 1/2 c Flour
2/3 c Cocoa
1 ts Baking soda
1 ts Salt
1 c Sugar
1/2 c Brown sugar
1 c Shortening
2 Eggs
1 ts Vanilla
To begin, place a bag of minature colored marshmallows into the freezer about an hour before baking. Sift together and set aside; flour, cocoa, baking soda, salt. Cream together sugar, brown sugar, shortening, eggs and vanilla. Once you have creamed the above ingredients together begin to add the dry ingred. Once the dough is mixed, remove the marshmallows from the freezer and place in a bowl along with another bowl filled with sugar. Take a small amount of dough and place a marshmallow in the center( roll into a ball). Roll the ball in the bowl of sugar and place on greased cookie sheet( if you use the teflon you don't need to grease). Bake 5 to 7 min at 350~F. You need to watch them carefully. The minute you see a single cookie crack, pull them all from the oven. Let them cool some before you remove from sheet. makes about 4 doz. -----

I tested 8 recipes - here's my favorite homemade marshmallow cream
RECIPE AMOUNTS:
To make a little over 2 cups of homemade marshmallow creme (enough for a thin layer of filling between 3 layers of 6 inch cake rounds)
3 TB (44g) cold water
2.5 teaspoons (8g) gelatin (Knox powdered)
about 1/2 cup (121g) fresh egg whites
1 cup (200g) white granulated sugar
1/8 teaspoon cream of tartar
1 teaspoon vanilla
1/4 teaspoon salt
For a firmer filling, say if you had a taller cake or wanted a filling with more height, you can use 1 tablespoon of gelatin that is hydrated in 3.5 Tablespoons of water.
TIPS for success:
1. Try to use the cream while it's still soft (before it sets) to get the smoothest result.
2. For extra protection (which I didn't show in this video) apply buttercream on the cake layers first, then pipe the dam, then add the fluff, and top with a thin layer of buttercream before adding the next cake layer. This prevents any excess moisture from migrating from the cake layers into the marshmallow, which has a high concentration of sugar that tends to pull moisture from nearby things.

4. Allow the crumb-coated cake with the marshmallow filling to set for at least 4-6 hours in the fridge, but overnight would be best if you can. Don't worry, the crumb coat protects the inner cake layers from drying out.

21 grams unflavored gelatin (3 packs) I use knox gelatin powder, you can use agar agar to make them vegan but it won't have the same texture.

These soft, sweet, luscious homemade marshmallows completely blow their store-bought rivals out of the water and they're quite fun to make too. They're perfect for s'mores, snacking, or a big cup of hot chocolate.

I thought I didn’t like marshmallows until I started making my own! The homemade variety uses just a few ingredients and you can really taste the vanilla and feel how much softer they are when you compare them to the pre-made powdery ones you get from the grocery store.

Marshmallow Brownie's Step By Step Instructions
These brownie's are the best! When you start making them you will get all kinds of requests to bring them to the parties. The frosting on the top is like fudge, the brownie on the bottom is chewy and the marshmallows in the middle ties it all together plus makes them pretty and festive!
Marshmallow for 15 minutes with simple 3 ingredients
MARSHMALLOW 3 SIMPLE INGREDIENTS ????
Combine 1/2 cup of boiling water with 2 bags of gelatin (14 grams)
Mix until the gelatin fully dissolves.
In a pot combine 1 1/2 cup sugar and 1/2 cup water. Bring it to 240F.
In the mixing bowl combine warm gelatin syrup with boiling sugar syrup. Mix on high speed until medium peeks.
Line your container with parchment paper and dust lots of powder sugar. (Powder sugar must contain cornstarch) Transfer the marshmallow to the container.
Use TINY BIT on water on your hands to help you spread the marshmallow.
Dust more power sugar on top.
Let it set at room temperature for at least 3-4 hours before slicing.

24g powdered gelatine w/ 1/4 cup of water to 'bloom'
1/2 cup liquid glucose
3/4 cup sugar (granulated or caster is fine)
1/2 cup of water for the syrup
2 tsp vanilla extract
2 cups of cornflour & 2 cups of icing sugar sifted together
