6 tbsp natural unsweetened cocoa powder
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp sea salt
1 cup granulated sugar
1/2 cup buttermilk
1/2 cup coffee
1/4 cup grape seed oil

For the frosting:
1.5 sticks unsalted butter, at room temperature
1 cup marshmallow creme
1/2 tsp vanilla extract
1/2 cup confectioner's sugar
Directions:
Preheat the oven to 350 degrees F.
In a large bowl, whisk to combine the flour, cocoa powder, baking soda, baking powder, sea salt, and sugar. In another bowl, whisk to combine the buttermilk, coffee, oil, egg, and vanilla. Add the wet ingredients to the dry and stir until the flour streaks have disappeared. Portion into cupcake wells, filling them no higher than 2/3 up, and bake for 20 minutes, until a toothpick inserted into the cupcake comes out clean.
To make the frosting, whip together the butter, marshmallow creme, vanilla extract, and confectioner's sugar until fluffy and light. Pipe onto the completely cooled cupcakes.

Skillet Chocolate Chunk Marshmallow Cookie | Delish + Country Crock®
A recipe for a Skillet Chocolate Chunk Marshmallow Cookie from Country Crock®.
DIRECTIONS
1. Preheat the oven to 350 degrees F.
2. Combine the Country Crock® spread, both sugars, egg, egg yolk and vanilla in a large bowl and mix until fully incorporated (about 3 minutes). Mix in the flour, baking powder, salt and baking soda and stir until the dough is sticky. Reserving a few pieces of each, fold the majority of the chocolate chunks and marshmallows into the dough. Spread the dough evenly in a 12-inch skillet and scatter the reserved chocolate chunks and marshmallows on top.
3. Bake until the center is cooked through, and a knife inserted in the middle comes out clean (about 50 minutes). The top should be golden brown and slightly crunchy. Allow the cookie to cool and set for about 30 minutes.
INGREDIENTS
1 cup Country Crock®
¾ cup granulated sugar
¾ cup firmly packed light brown sugar
1 large egg
1 large egg yolk
2 tsp. vanilla extract
3 cups flour
1 tsp. baking powder
¾ tsp. salt
¼ tsp. baking soda
8 oz. chocolate chunks (about 1 ½ cups)
2 cups mini marshmallows

Spider Chocolate Chip Cookies: Halloween Chocolate Chip Cookies from Cookies Cupcakes and Cardio
Using a tradition chocolate chip cookie recipe, we make them into Spider Chocolate Chip Cookies for Halloween using melted chocolate! The chocolate chip cookies are chewy and delicious....and the spiders are sure to gross out your guests!
In the video, I inadvertently forgot to mention to add the chocolate chip for the spider's body...when the cookies are still warm, insert a chocolate chip upside down.

Ingredients:
2 1/4 cup all purpose flour (270g)
1/2 teaspoon baking soda (2.5mL)
1 cup butter (240g)
1/2 cup granulated sugar (50g)
1 cup brown sugar (180g)
1 teaspoon salt (5mL)
2 teaspoons vanilla extract (10mL)
2 eggs
2 cups chocolate chips (16oz) + reserved chocolate chips for making spiders
Procedure:
Combine flour, salt and soda in a bowl and mix. Set aside for later. In a stand mixer fitted with the paddle attachment, cream butter and sugars. Add eggs one at a time, and vanilla. Add flour mixture and mix until combined. Add chocolate chips. Scoop out cookie dough onto a parchment lined tray and bake at 350F for 10-12 minutes.
Melt reserved chocolate chips and put into piping bag with a small part of the tip cut off. When cookies have cooled, pipe on 8 spider legs onto chocolate chips that are prominent. If no chocolate chips are prominent, while cookies are still warm, place one/two chips upside down in the cookie.
