How To make Mexican Style Hot Chocolate
2 3/4 c Nonfat dry milk powder
1/2 c Unsweetened cocoa powder
1/2 c Powdered sugar substitute*
1 ts Ground cinnamon
*Not aspertame - loses sweetness when heated. For cocoa mix, in a storage container combine dry milk powder, cocoa powder, sugar substitute and cinnamon. Mix well. Cover and store in a cool, dry place up to 8 weeks. For each serving, place 1/3 cup of the cocoa mix in a mug. Add 2/3 cup boiling water; stir to mix. Makes 9 servings, each 8 oz. 1 serving 113 calories, 8 g protein, 14 g carbohydrate, 4 g total fat, 2 g

This Mexican hot chocolate is similar to champurrado, but it is not flavored with anise or sweetened with piloncillo, making this recipe a bit simpler, and tastes just as delicoso. It is thicker than traditional hot chocolate using corn starch, but thinner than champurrado.

Mexican Style Hot Chocolate Recipe
This Mexican hot chocolate is smooth, creamy and extra rich. Made with cinnamon and a hint of chili. The perfect comfort food for cold winter days. This version of hot chocolate (chocolate caliente) is very easy to make and requires only 5-10 minutes of work.

Ingredients:
1½ cups (360ml) Milk
1 tablespoon (8) Cocoa powder
2oz (60g) Dark chocolate
1-2 tablespoons Brown sugar
1/2 teaspoon Vanilla extract
1 Cinnamon stick
1/8 teaspoon Cayenne Pepper / chili powder (optional)
Pinch Salt
Directions:
1. Chop the chocolate. Set aside.
2. In a medium saucepan over medium heat, add milk, cocoa powder, sugar, cinnamon stick, chili powder/cayenne pepper. Bring to a simmer, stirring frequently.
3. Stir in chopped chocolate and vanilla extract. Whisk until completely melted. Remove cinnamon stick.
