1 c Butter, room temperature
1/2 c Powdered sugar
1/4 ts Salt
1 ts Vanilla extract
2 c Sifted flour
More powdered sugar Cream butter; add sugar gradually. Blend in salt, vanilla, & flour. If too soft, chill until firm. Scoop small pieces of dough, roll in hand to make a small ball, & place on ungreased cookie sheets. Bake in preheated 400 degree oven about 12 minutes, or until golden brown. Roll cookies in powdered sugar while hot. Cool on wire rack. Freeze well. -----

Make sure the butter is at room temperature
Tip!!! Allow the cookies to cool down for 10 minutes before coating with powder sugar
If you think its too much sugar, add 1/2 cup only
PRO TIP good but not necessary- refrigate for 20 minutes before baking
Bake at 350 for 15 minutes

One of the things that makes our Mexican Wedding Cakes a Christmas cookie favorite is their round shape. This shape makes the cookies easy to eat in one bite, which is important because the cookies are so crumbly.
