MEXICAN WEDDING COOKIES INGREDIENTS:
► 2 cups flour
► 1 cup chopped pecans
► 1/2 cup powdered sugar
► 1 1/4 cup unsalted butter (at room temperature)
► 1 tsp ground cinnamon
► Pinch of salt
► Cooking spray

These super-easy, melt in your mouth cookies made with lots of almond meal and rolled in powdered sugar are a global favorite! Almost every culture has a variation and all are delicious!
Aliases include: Mexican wedding cookies, or polvorones, kourabiedes in Greece, Russian tea cakes, snowball cookies in parts of America, boomeranng cookies, and the list goes on! So delicious and they whip up in a snap. The cookies themselves are not very sweet so that heavy dusting of powdered sugar and just the right amount of sweetness.
I used almond meal in these cookies but you can use ground walnuts, or pecans and definitely feel free to have some larger chunks in there too.

Looking at these cookies you could mistake them for Melting Moments, as the only difference between the two is that Mexican Wedding Cakes contain ground nuts (either ground pecans, hazelnuts, almonds, or walnuts).

Homemade Mexican Wedding Cookies Recipe ????♀️
Today we're making DELICIOUS homemade Mexican Wedding Cookies! The full recipe is below. Please note it is 2 CUPS FLOUR (not 1 3/4 cups as I said in the video). So sorry for the confusion and let me know if you have any other questions. ❤️

INGREDIENTS
1 cup unsalted butter, softened
3/4 cup powdered sugar
2 teaspoons vanilla
2 cups all-purpose flour
1/4 teaspoon salt
1 cup finely chopped pecans
For rolling:
1 cup powdered sugar
INSTRUCTIONS
Preheat oven to 375 degrees F. Line two baking sheets with parchment paper.
In a large mixing bowl, cream butter, sugar and vanilla. Add flour, salt and pecans. Blend again just until dough comes together.
Shape dough into 24 1-inch balls. Place 12 balls on each lined baking sheet and bake for 12 minutes. Do not brown. Place 1 cup powdered sugar in a shallow bowl. Let cookies cool slightly before rolling in the powdered sugar. Enjoy!
