How To make Mexican Polvarone Cookies
Coating: 1/2 c Granulated sugar
1 Semi-sweet chocolate square
; grated 1/2 ts Cinnamon
Cookies: 1 c Golden crisco shortening
1/2 c Icing sugar; sifted
2 tb Milk
1 ts Vanilla
1 3/4 c All purpose flour
3/4 ts Baking powder
1/2 ts Cinnamon
1. Combine sugar, chocolate and cinnamon in small bowl; set
aside. Cookies: 2. Preheat oven to 300F (150C).
3. Beat shortening, icing sugar, milk and vanilla together
on medium speed of electric mixer until light and creamy. Add flour, baking powder and cinnamon, beating on low speed until blended. (Dough will be soft). 4. Shape dough into 1-1/4 inch (3 cm) balls. Place on
ungreased baking sheet. Flatten to 2 inch (5 cm) circles about 1/4" (6 mm) thick with glass or pancake turner dipped in flour. 5. Bake at 300F (150C) for 20-25 minutes. Cool 1 minute,
then place each warm cookie in coating mixture, turning to coat both sides. Cool. Makes: About 2 dozen cookies. Freezing: excellent -----

RECIPE INGREDIENTS & MEASUREMENTS: Yields about 24 Cookies (~30g each)
Dough:
1 cup butter (240g)
1 cup powder sugar/confectioners sugar (125g)
2 tsp vanilla extract (10ml)
2 cups All purpose flour (240g)
1/2 cup crushed walnuts (63g)
1/2 cup crushed almonds (63g)
Sugar Coating:
3/4 cup powdered sugar/confectioners sugar (~94g)
SUBSTITUTIONS:
Butter: Vegetable Shortening or Margarine
Crushed walnuts: crushed pecans tend to be the most popular nut choice for these cookies, but you can use any other type of nut you prefer (i.e. pistachios, cashews, macadamia nuts, etc.). You could even add chocolate chips or dried fruit such as cranberries or dates. Get creative. :)
1/2 cup crushed almonds: if you prefer to only use one type of nut instead of a mix of two different kinds then use 1 whole cup (126g) of any nut variety you choose.
Gluten Free Alternative:
- Omit the all purpose flour and instead use 2 cups (240g) of a gluten free all purpose flour that contains xanthan gum. Additionally you can also try using 2 cups (240g) of blanched almond flour, but also include 1 tsp (5g) of xanthan gum and 5 tbsp (75g) of cornstarch.

Recipe Notes:
Store cookies in an airtight container at room temperature for up to 7 days. The flavor of these cookies will continue to develop each day.

I M P O R T A N T ⚠️
Make sure the butter is at room temperature
Tip!!! Allow the cookies to cool down for 10 minutes before coating with powder sugar
If you think its too much sugar, add 1/2 cup only
PRO TIP good but not necessary- refrigate for 20 minutes before baking
Bake at 350 for 15 minutes
Ingredients: 16 cookies (2 tbsp each) double recipe if needed ????
