5 Minute Miso Sauce Makes Everything Better (Miso Paste Recipe)
So, you've made miso soup and miso ramen and you have a container of miso at the back of your fridge gathering dust. What is a resourceful cook to do? I'll tell you: make this five minute miso sauce that makes literally everything it touches better. Plus, you can make this sauce with ingredients you already have in your kitchen!
Recipe for 2 servings of miso sauce:
Mix together in a small bowl and set aside:
3 tablespoon (45 gram) water
One tablespoon (20 gram) miso paste
Two tablespoon (45 gram) fruit jam, jelly or preserve
Heat oil in a small pan over medium heat and add:
1/2 teaspoon (3 gram) garlic, grated
1/2 teaspoon (3 gram) ginger, grated
Stir until fragrant
Add miso mixture to pan and heat until thickened, 2-3 minutes
Turn off heat and add:
2 tablespoon (28 gram butter)
Swirl pan until butter is emulsified
Season with a squeeze of lemon juice
Taste and adjust seasoning.
Strain through fine mesh strainer such as a chinois or tamis for a smoother sauce.

This ginger miso tofu is vegan, delicious, flavorful, and easy to make. The sauce is made from simply sautéing ginger until aromatic, then season with instant kombu dashi, light soy sauce, mirin and miso.

Ingredients
2 lbs of tofu drained
30 g ginger sliced
4 stalks of scallions sliced into 2-inch long
2 cups of hot water plus more for slurry
½ tablespoons white miso see note
1 packet [10g] vegan kombu dashi powder (see note)
2 tablespoons light soy sauce
2 tablespoons of mirin
2 teaspoons cornstarch
cooking oil
sesame oil
Notes
If another type of miso or kombu dashi is used, please taste test before adding tofu to avoid an overly salty dish.
Skip the instant kombu powder if homemade kombu dashi stock is used

Tofu Skewers Made With Miso Butter: A Delicious and Healthy Way to Snack
BBQ party anyone? Make this Miso Butter
Tofu Skewers ????, the most flavourful tofu you ever tasted. Smoky, slightly sweet and full of umami.
????: Recipe by:-
SAVE AND TRY ????
TO MAKE:
16 oz extra-firm tofu
1 zucchini
1 red bell pepper
1/2 purple onion
Lime and cilantro for serving
For the marinade
1 1/2 tbsp coconut oil
3 garlic cloves, minced
2 tbsp miso paste
1 tbsp tamari/soy sauce
1 tbsp coconut amino
1 tsp brown sugar
2 tbsp water as needed
- In a saucepan, melt the coconut oil over medium heat, fry the garlic till golden and fragrant.
- Add in the miso paste, press and stir to combine, then add the soy sauce and coconut amino, keep stirring to mix everything.
- Add in the brown sugar, lower the heat to medium- low and continue to stir, bring the sauce to a gentle bubble, thin the sauce as needed with water.
- Continue to cook till desired consistency, the longer you let it cook the thicker the sauce will get, I like the marinade to be thick but still fluid.
- Pat dry the tofu, break into cubes with your hands, don't make them too small or they might slip from the Skewers.
- Pour about 4/5 of the marinade into the tofu, reserve the rest of the sauce for serving, let the tofu marinate for an hour
Meanwhile, prep your veggies by cutting them into suitable sizes for the skewer.
- Thread the tofu and veggies onto skewers, if you're using bamboo skewers, be sure to soak them in water first to prevent burning.
- Air fryer method, transfer all skewers onto the rotisserie rack or arrange in a single layer, air fry at 400°F for 15 - 20 minutes till golden brown.
- Oven method, preheat the oven to 400°F, arrange the skewers onto a lined baking pan, it's best if you could find a pan whose width is just a little shorter than your skewers, so you could rest the two ends of the skewers onto the two opposite edges of the pan without the body of the skewers touching the bottom, to ensure maximum airflow, bake for 30 minutes, check and rotate the skewers throughout as needed
- Serve with the remaining sauce, lime slices, and chopped cilantro, enjoy!
