FARMORS PEPPARKAKOR | My Grandmother’s Swedish Gingersnaps | 12 Days of Christmas 2022 ep.5
Think of these as like the Swedish version of gingerbread cookies, but thin and crisp, not soft. This recipe comes from my farmor, my paternal grandmother, and is the recipe I have grown up with. Its a bit different from the modern pepparkakor you find in Stockholm nowadays. Most are usually fairly heavily spiced with cloves, cinnamon, and ginger. Her recipe uses only cloves and orange zest, resulting in a spiced but more subtle cookie. I love these so much and making them is always like one of the highlights of Christmas for me.
285g golden syrup (ljussirap or lyles golden syrup)
285g sugar
285g butter
2 eggs
830g flour
2 tsp baking soda
2 tsp cloves (preferably freshly ground)
1 orange zest
Heat the syrup and sugar together until the sugar is melted. Add in the butter a bit at a time to cool down the syrup. Transfer to a mixing bowl and add the eggs one at a time. Add the cloves, zest and baking soda. Add the flour a bit at a time, just until you have a workable dough, about 650g (ish). Let the dough rest overnight. Roll out until it is very thin. Cut out shapes and put on parchment lined trays. Bake at 175C/350F for about 8 minutes.
You will really get into a grove with these cookies, especially if you have two cookie sheets working
Mini Soft Gingerbread - Mjuk Pepparkaka | Baking Advent Calendar | Day 10
Day 10 of the baking advent calendar. Today's recipe and video is Mini Soft Gingerbread, or as they are called in Sweden Mjuk Pepparkaka! Super soft and moist cake that tastes just like gingerbread.

Recipe:
Ingredients:
50g butter melted,
75ml sourcream
1 egg
50g sugar
25g brown sugar
1 tbsp golden syrup
90g plain flour
½ tsp ginger
1/4 tsp cloves
1 tsp cinnamon
1/8 tsp cardamom
½ tsp baking soda
Directions:
Preheat oven to 175c and grease a mini bundt pan.
Mix together the melted butter and sourcream and place to one side.
In a large bowl whisk together the sugars and egg until light and fluffy,
add the golden syrup,
sieve in the flour, baking soda and all of the spices.
Carefully turn down until everything is combined.
Evenly distribute between the cake pan wholes and bake in the centre of the oven for 12-15 minutes.
Remove from cake pan and leave to cool on a cooling rack.

In this video I will show you how to make Gingerbread Cookies recipe. You make the dough a day before. These cookies takes a little time to make but oh so delicious. My son that don't like any sweets at all likes these cookies. Hope you will enjoy.
Ingredients
350 g ( 12 oz ) unsalted butter, room temperature
500 g ( 17.6 oz ) granulated suger
2,5 dl ( 1 cup ) light sirap
1 dl ( 1/4 cup ) water
1,5 dl ( 0.6 cup )whipped cream
1,5 msk ( 1.5 tbsp ) cinnamon
0.6 msk ( 0.6 tbsp ) ground cloves
0.5 msk ( 0.5 tbsp ) ground ginger
0.7 msk ( 0.7 tbsp ) ground cardamom
3 msk lemon juice
1.5 msk ( 3 tbsp ) baking soda
14 dl ( 6 cup ) all purpose flour
How to make:
1. Wipe butter, sugar and sirap until fluffy.
2. Sift the flour and baking soda and put to the side.
3. In a pan on low heat boil water, cream and all the spices.
4. Add the liquid to the butter mixture while the mixer is on.
5. Add the flour little at the time until combined.
6. Divide tough in 3 sections. Wrap in plastic and put in fridge for 24 hours.
7. Put your oven on for 395 F. Take out one of the dough wrap and let sit a little.
8. Flatten the dough between parchment paper.
9. Carve out the shape you want and remove excess dough.
10. Glide the parchment paper with the cookies on a baking sheet. Bake for 4-6 min.
11. Let cool on counter a little before moving to cooling rack. They are to soft right after the oven.

Ingredienser:
3 dl sirap
4,5 tsk pepparkakskrydda
7 dl vetemjöl (420 g)
1 msk bikarbonat
2 msk mjölk
Det går bra att använda färdigblandad pepparkakskrydda, vi gjorde dock egen, med följande ingredienser:
2 tsk kanel
1 tsk kardemumma
1 tsk ingefära
0,5 tsk nejlika
Gör så här:
(Dag 1)
Blanda ihop de torra ingredienserna. Tillsätt mjölk och sirap och blanda ihop till en deg. Plasta in och lägg i kylen över natten.
(Dag 2)
Dela upp degen i 18 lika stora bitar. Lägg på plåt. Grädda i ugnen i 200 grader i 8 minuter, låt svalna på galler.

Ginger and Banana Bread, makes 1 loaf:
2 flax eggs (2 tbsp milled flaxseed + 5 tbsp water)
3 medium sized bananas
0,3 cup cashew or almond butter
0,3 cup maple syrup
2 tbsp melted coconut oil or other neutral oil
0,25 cup soy milk (room temperature)
1,3 cup desiccated coconut
1 cup gluten free all purpose flour
0,75 cup almond meal + extra for the tin
1 tsp baking soda
1 tsp baking powder
1 tbsp cinnamon
2 tsp ground cloves
2 tsp ground ginger
- Preheat the oven to 180 degrees C.
- Make flax eggs by combining 2 tbsp milled flax seed with 5 tbsp water in a large mixing
bowl and set aside for 10-15 minutes.
- In the meantime prepare a loaf tin by cutting a long strip of baking paper to cover the length of the bottom and short ends. This strip will work as handles later when you lift your bread out of the tin. Grease the side of the paper that will face up in the tin as well as the long sides of the inside of the tin. Place the paper inside the tin and sprinkle some almond meal onto all the greased surfaces.
- Combine the dry ingredients in a separate bowl from the flax seed mixture. Use a balloon whisk to stir the dry ingredients together to disperse them evenly. Set aside.
- Once the flax eggs have gelled break the bananas into small pieces and add them to the bowl. Mash the bananas thoroughly. Add the remaining wet ingredients and mix well. Be careful not to use cold soy milk as this might cause the coconut oil to solidify.
- Finally combine the wet and dry mixture by adding the dry, bit by bit, to the wet while whisking continuously making sure there are no lumps of flour.
- Once the mixture is well combined pour it into the prepared loaf tin and smooth it out using a spatula.
- Bake in the oven for 50-55 minutes or until a toothpick comes out clean from the middle of the bread. Allow to cool in the tin a little before transferring it to an oven rack to continue cooling. Make sure it cools completely before you cut it as it could crumble if you cut when hot.
