How To make Mocha Cake
1/2 c Shortening
1 c Brown sugar
1 3/4 c Flour
1/2 ts Baking soda
1/2 ts Allspice
1/4 ts Salt
1 c Currents
2 Eggs, well beaten
1 tb Coffee
1/2 c Boiling water
1 t Cinnamon
1/2 ts Cloves
1 c Raisins
1/2 c Finely sliced citron
Combine coffee and boiling water. Boil 3 minutes. Strain and cool. Cream sugar with shortening. Add eggs. Beat thoroughly. Sift flour, measure, and sift with baking soda,salt, and spices, reserving 1/4 cup of the flour for dredging the fruits. Add dry ingredients alternately with coffee to first mixture. Beat until smooth. Add fruits. Mix well. Pour into well-oiled loaf pan. Bake in slow oven (350 F) about 40 minutes. The Household Searchlight

Coffee always accentuates the chocolatey flavor of a chocolate cake of ganache. Most of the time you don’t even notice it but today I’m pouring some extra espresso into the batter and buttercream to make an amazing mocha cake! Between each layer you’ll find a mocha buttercream, chocolate ganache and chopped chocolate covered espresso beans. This is a cake for coffee lovers so if you’re not a fan maybe try my ultimate funfetti cake?

Buttermilk: (Mix and set aside atleast for 5 minutes)
1 Cup Evaporated Milk, 1 Tablespoon Vinegar
Mix, Dry ingredients (Must be sifted, except for the sugar)
2 & 1/2 Cups All purpose flour
1 Tablespoon Cocoa Powder
1/4 Cup Milk powder
1 & 1/2 Teaspoon Baking Soda
2 Teaspoon Baking powder
Mix
2 Eggs
1 Cup Vegetable Oil
1 Tablespoon vanilla
1 & 3/4 Cups Sugar
Mix
1/2 Cup like warm water (Mali yung nasabe ko sa video na 1 & 1/2 cup)
3 Teaspoon Black coffee powder
Pre-heat oven for 140 Degree celcuis for 10 minutes.
then drop temperature for 120 degree celcuis then bake for 1 hour and 30 minutes.
TAKE NOTE; DO NOT OVER MIX THE MIXTURE
IT WILL AFFECT THE TEXTURE OF OUR MOCHA CAKE.
This recipe can make 2pc. 6x3 round pan

3 Teaspoon Tablespoon BLACK COFFEE POWDER
1/4 CUP CHOCO FUDGE OR GANANCHE
FOR CHOCOLATE FUDGE
INGREDIENTS:
1/2 CUP COCOA POWDER (UNSWEETENED)
2 CUPS EVAPORATED MILK
6 TBSP. CORNSTARCH
1 CUP SUGAR
1 TSP. IODIZED SALT
2 tbsp. VEGETABLE OIL OR MELTED BUTTER
1/3 CUP WATER
1/3 CUP ALL PURPOSE CREAM

baking time and temp: 160°C for 60 - 70 minutes
shortening paste: 2 - 3 tbsp. shortening + 1 tbsp. flour
Mocha chiffon ingredients:
1 & 3/4 cups cake flour = 12.60 ( P42 per kilo)
1/2 cup white sugar = 5.50 (P55 per kilo)
1 tsp. salt = .50 (P48 per kilo)
2 tsp. cocoa powder/ hershey's cocoa = 4.00 (P100 per 1/4 kl)
2 tbsp. instant coffee powder= 8.20 (P76 per 100 grams)
1 and 1/2 tsp. baking powder = .50 (P25 per 1/4 kilo)
1/2 cup oil= 6.00 ( P60 per litre)
3/4 cups evaporated milk =12.00 (P24 per can)
