Italian Meatloaf Recipe - Your Family Will Love This Twist On A Classic
I’ve never been a fan of meatloaf, not really my thing. But this is a different story!
This Italian Meatloaf Wrapped in Pancetta is a dish that is sure to please any Italian food lover. The Italian meatloaf is made with a mix of beef and pork, some vegetables and a few secret ingredients keeping it juicy and super tasty. It is then wrapped in pancetta and cooked until it is super juicy and crispy on the outside.
This version a little like an arancini whereby it contains a small piece of mozzarella cheese that oozes out from the centre. This recipe is sure to become a family favourite for both meatloaf lovers and otherwise. Perfect for the festive season and to impress your guests!
I like it with buttery roasted potatoes and green vegetables like green beans or asparagus. But you could also serve it with a salad.

How To Make Meatloaf - Stuffed w/ Cheese!
This is not your Mama's Meatloaf... or maybe it is and she already got this recipe from my blog, lol! All jokes aside, this is one of my favorite meal prep recipes. I like to do this on my smoker outside, but it is just as delicious in the oven. We stuff this baby with cheese and glaze it with a delicious sauce. Check it out!

Ingredients: (Grocery List)
2 lbs 80/20 or 85/15 Ground Beef
1/2 large onion
1 tbs garlic (optional)
1 jalapeno
1/2 large red pepper
2 oz sharp cheddar
2 cups bread crumbs (as needed)
1 tbs Worchestershire
2 eggs
1/2 cup bbq sauce
1/4 cup ketchup
2 tbs Italian seasoning
salt, pepper, mccormicks hamburger seasoning
Directions:
Preheat grill or oven to 350 & prep your veggies.
Cook veggies and garlic - then set aside in the fridge to cool. Combine ground beef and season with Italian seasoning, salt, pepper. Add veggie mixture and Worchestershire sauce. Begin to mix everything together and add bread crumbs gradually. Add in 1 whisked egg and more bread crumbs until the meatloaf takes form and has proper consistency. Put in the fridge for 20 minutes to firm up.
Form mixture into a loaf shape. Dig a trench in the middle and add your cheese - then close it up tightly. (You can place this back in the fridge again for a bit to ensure it holds together better) Season outside with mccormicks hamburger seasoning. Bake or smoke at 350 until it reaches 165 internal temp (about 1 hour). Baste with your favorite (warmed) bbq sauce about half way through. Let rest 20-30 minutes before slicing.

Prosciutto Spinach and Mozzarella Stuffed Meatloaf ????
If I have learned anything about historical cooking, it is that people for generations have loved meat wrapped around things, or even things wrapped around meat. While we do not typically see “stuffed” meat at many meals nowadays, you can still find little savory pies for sale at restaurants or served at the supper table.
Simple to make yet complicated to look at, this dish is one that my family absolutely loved and devoured. They all looked at it with a bit of apprehension, but trusting my abilities, all ate it with faith and ended up big fans of the stuffed meatloaf.
