Chocolate Cornflakes Cookies (3 Ingredient No Bake Cookies!)
These cookies are great for lazy day sweet cravings. They only need 3 ingredients, no baking required, and don't take much prep!

Ingredients:
4 ounces semi-sweet Baker's or couverture chocolate, (about 1/2 cup) chopped
1/4 cup (1/2 stick) unsalted butter
2 & 1/2 cups cornflakes cereal
Instructions:
Line a large baking sheet with plastic wrap or parchment paper. Set aside.
In a heat proof bowl, combine chopped chocolate and butter.
Melt in a microwave for 30 seconds on high heat. Remove and stir for about 10 seconds until everything is melted. If you still see chunks of chocolate and/or butter, heat in the microwave again in 10 second intervals, stirring well in between, until melted and smooth.
OR, melt over a pot of barely simmering water. Make sure the bottom of the bowl is not touching the surface of the water. Stir occasionally while the steam gently melts the ingredients (this takes around 5 minutes).
After melting the chocolate and butter mix, add your cornflakes while it’s still warm. Stir to coat all of the cornflakes in chocolate.
Using 2 spoons or a large ice cream scoop, portion the chocolate covered cornflakes into cookies and place on your prepared baking sheet. Repeat until all of the chocolate covered cornflakes are portioned out.
Cover the cookies with plastic wrap. Using the plastic wrap, gently press down on each cookie to pack the cornflakes together. Freeze cookies for 30 minutes or refrigerate for 1 hour until the cookies are chilled and solid.

My cornflake marshmallow treats recipe is easy and delicious! Similar in taste to regular rice krispie treats bars, this cornflakes version is a bit crunchier, making the texture contrast with the chewy marshmallows even more pronounced. I recommend sprinkling these with a bit of salt to really bring out the flavor, but that's not totally necessary. While these would be a perfect change-of-pace for Christmas or holiday baking, these no bake cookies would be great at any time of the year. This is the last recipe in my no-bake marshmallow treats recipe series for Christmas 2022, so don't miss this video!
Overall, these cornflake marshmallow treats were very good. Although the flavor was very similar to regular rice krispie treats, these were a bit crunchier. If you like crunchy things, you will love these.
Like I said, the flavor was very similar to regular crispy treats, but I felt like maybe these treats were a bit less flavorful. That's why I recommend sprinkling them with some extra salt before serving to really bring out the flavor.
This recipe was also a good example of how sometimes you have to adjust recipes. As predicted, I had to use more marshmallows than I had already planned. Sometimes you definitely need to go with your instincts in the kitchen and change recipes on the fly when things just don't seem right.
If you like no bake crispy cereal bars with marshmallows, you definitely need to give these cornflake treats a try. Like I said, this is the last recipe in my Christmas 2022 no-bake cookies video series, so I hope you give this one a try.????????????????????????
Cornflake Marshmallow Treats Recipe
6 cups cornflakes cereal (240g)
14 oz miniature marshmallows (400g) *I started out with 10 oz, then added more
1 stick butter, unsalted (113g)
1/8 teaspoon salt
Highly Recommend:
1/8-1/4 extra salt, sprinkled on top of finished bars
Optional:
1 teaspoon vanilla

KETO TOFFEE RECIPE
Makes 20 pieces
1 cup unsalted butter
1 cup packed brown sugar free sweetener (Swerve brand)
2 tablespoons water
½ teaspoon salt
1 teaspoon vanilla extract
7oz sugar free chocolate chips
1 tablespoon flaked salt
⅓ cup crushed pecans
1️⃣ Prepare a square baking dish or ¼ sheet pan by lining it with parchment paper. Set aside.
2️⃣ In a saucepan, add butter, sweetener, water and salt. Heat over medium heat and bring to a boil. Continue to let cook, stirring occasionally until temperature on a candy thermometer reads 300 degrees.
3️⃣ Remove from heat. Immediately stir in vanilla and pour into prepared baking dish. Even spread toffee mixture and let sit for several minutes until the toffee starts to harden on the top. It will turn opaque.
4️⃣ When the majority of the toffee is opaque, sprinkle chocolate chips evenly over the toffee. Cover dish with aluminum foil for 4-5 minutes to help melt the chocolate.
5️⃣ Remove the foil, and spread the melted chocolate evenly over the toffee. Top with flaked salt and crushed pecans. Cover again and place in the refrigerator to further set for 1-2 hours.
** If the chocolate doesn’t melt after covering. Place the dish, uncovered under the broiled on high for 30-60 seconds.
