9 oz (500 gram) ripe Camembert -cheese 4 1/2 oz (250 gram) cream cheese 2 1/2 tb (80 gram) butter 2 sm Onions, finely chopped OBATZDA (Cheese Spread) beer salt, pepper, caraway With A fork, crush and blend cheese with butter. Add chopped onions and salt, pepper, caraway. Gradually blend in just enough beer to create a spreadable mixture. Refrigerate until ready to serve.

Obatzda is a Bavarian Cheese dip, with two types of cheese and is really simple to make. The American Beer cheese is closer to a soup and starts by making a flour roux. I really enjoyed making both Cheese dips and I'm happy to share both recipes with you.
