How To make Orange Cheesecake with Strawberries
CRUST:
1 c Finely crushed vanilla
-wafers 1/2 ts Ground cinnamon
1 tb Egg white
Vegetable oil cooking spray
CHEESECAKE:
16 oz Low-fat cottage cheese
8 oz Light cream cheese
-(Neufchatel), at room -temperature 1/3 c Sugar
1 tb All-purpose flour
2 tb Orange juice
1 1/2 ts Grated orange rind (colored
-part only) 1 ts Vanilla extract
1 lg Navel orange, sectioned,
-membranes removed 1 pt Strawberries, sliced thinly
This delicious cheesecake is adapted from "The Lighter Touch Cookbook," by Marie Simmons. Using egg whites in the crust instead of butter and combining low-fat cottage cheese with cream cheese keeps the calories to 137 per serving and the fat to 5 grams, excellent
numbers for a dessert that is still rich and satisfying. 1. Heat the oven to 350 degrees. Combine the vanilla
wafers and cinnamon in a bowl. In a separate bowl, whisk the egg white until foamy and blend it into the crumbs with a fork. 2. Spray a 9-inch springform pan with cooking spray.
Press the crumbs in an even layer in the bottom of the prepared pan. Bake 10 minutes. Cool. Reduce oven temperature to 300 degrees. 3. Combine the cottage cheese, cream cheese, sugar,
flour, orange juice, orange rind and vanilla extract in the bowl of a food processor until very smooth. Spoon into the prepared crust and smooth the top with a rubber spatula. 4. Bake until set in the center, 35 to 40 minutes.
Cool in the pan. Refrigerate until cold. Loosen the sides of the cake with a small spatula and remove the pan rim. 5. Combine the orange sections and strawberries. Cut

Ingredients:
Crust:
Butter melted 113g (1/2 cup) 4 oz.
Salt 3g 1/2 tspn
Graham crumbs 229g
Filling:
Cream cheese 491g (1 lbs.) 16 oz.
Sugar 188g (3/4 cup)
Milk 67g (1/4 cup)
Whole Eggs 2 each
All purpose flour 20g (2 Tblspn)
Vanilla extract 13g (1 Tblspn)
Orange zest 1/2 orange
Sour cream 110g (1/2 cup)
Salt 2g (1/4 tspn)
Passion fruit purée (optional) 50g (optional)
Gelee:
Mandarin orange segments 460g ( 2 14. 0z.)
Mandarin orange juice 100g
Passion fruit purée 40g (2 Tblspn) (optional) use orange juice if not available )
Sugar 60g
Gelatins sheets 3 each

Hi, dears! Today I'm gonna share with you an easy, no-bake, and delicious cheesecake recipe. I really love this recipe so much and highly recommend you make it at home and enjoy it with your family. I hope you like it so much and give your opinions on the comments.
INGREDIENTS:
- 120 gr biscuits
- 50 gr unsalted butter (melted)
- 8 gr agar powder
- 50 ml water
- 200 gr cream cheese
- 50 gr sugar
- 150 ml cream
- 40 ml fresh orange juice
- 1 tbsp orange zest
- 1 ml vanilla extract
- 2 tbsp sour cream
for orange jelly topping
- 200 ml fresh orange juice
- 8 gr agar powder
Refrigerate for 3-4 hours.
Tarkibi:
- 120 gr pechene
- 50 gr tuzsiz sariyog' (eritilgan)
- 8 gr agar kukuni
- 50 ml suv
- 200 gr qaymoqli pishloq
- 50 gr shakar
- 150 ml qaymoq
- 40 ml yangi apelsin sharbati
- 1 osh qoshiq apelsin qirindisi
- 1 ml vanil ekstrakti
- 2 osh qoshiq smetana
apelsin jeli bilan to'ldirish uchun
- 200 ml yangi apelsin sharbati
- 8 gr agar kukuni
3-4 soat davomida muzlatgichda saqlanadi.

Strawberry Blood Orange Cheesecake
Strawberry-blood orange cheesecake
16 oz cream cheese
1/4 cup sour cream
2/3 cups granulated sugar
2 eggs
2 tablespoons blood orange reduction
1/3 cup strawberry puree
Whip together cream cheese, eggs, sugar, and sour cream with the reduction first. Fold in the puree. Pour over the cooled crust, and bake at 325 degrees F for 50 minutes. Cool in the oven, turned off, for another 10 minutes, before moving to room temperature to prevent cracking (this happened in my cheesecake unfortunately).
Cornflake crust:
1 1/2 cups cornflakes
4 tablespoons butter, melted
blood orange peels
Melt butter with orange peels. Blitz cornflakes. Strain out peels and mix together. Press into the bottom of a lined baking tin and bake at 350 degrees F for 10 minutes.
Blood orange reduction:1 blood orange
Juice the blood orange and add in the peels. Reduce by half, remove the peels, then continue reducing to about 2 tablespoons’ worth of liquid. Make sure this is chilled before using.
Strawberry puree:
1 1/2 cups chopped strawberries
1/2 cup water
orange peels
Remove leaves and reserve those for the simple syrup. Reduce berries, orange peels, and water until the berries begin to soften immensely and turn light-pink. Strain out the berries and peels, pressing to extract as much of the pectin as possible, and continue to reduce until there is about 1/2 cup’s worth of puree left. Chill before using. 1/3 cup of the puree will be for the cheesecake, while the rest will be for glazing.
Strawberry leaf simple syrup
2 blood oranges’ worth of peels
strawberry leaves, baked at 350 degrees F for 6 minutes
water
1/4 cup sugar
Combine ingredients, bring to a simmer for 10 minutes, and strain out the solids.
Candied blood orange peels:
1 blood orange, sliced into 1/16th in thick pieces
Strawberry leaf simple syrup
Poach the orange slices in the syrup for about 4 minutes, or until the pith becomes opaque. Reserve the syrup for glazing fresh berries with. Bake at 350 degrees F for 25 minutes.
