How To make Pasta with Pork & Basil
8 oz Fusilli or other fresh pasta
6 oz Mushrooms
Fresh basil, parsley, chives
FOR THE MEATBALLS:
1 lb Lean freshly minced pork
Parmesan cheese Fresh basil Garlic 1/2 sm Egg; lightly beaten
A little butter or oil FOR THE SAUCE:
1/2 oz Butter
1 1/2 tb Plain flour
1/4 pt Double cream
1/2 pt (scant) stock
Parmesan cheese Dijon mustard Mix all the meatball ingredients thoroughly; I season the meat with 1 tablespoon grated Parmesan, 2 tablespoons basil and 1 smallish garlic clove, as well as salt and pepper. Flour your hands and shape the mixture into about 32 small balls. Fry in batches in a non-stick pan for 5 minutes or more until golden and cooked right through. Shake the pan frequently so the meatballs keep in good shape and cook evenly. Transfer to a casserole and keep hot. Slice the mushrooms thickly, saute' them well and add them to the meatballs. Then "wash out" the frying pan with the chicken stock. Make a smooth rich sauce with the butter, flour, stock and cream. Add any juices that have collected in the casserole and simmer for several minutes. Away from the heat, season with salt and pepper, 2 tablespoons Parmesan and 1 heaped teaspoon Dijon mustard. Pour the sauce over the meatballs, cover and keep hot in a low oven. The mixture can be kept hot for some time without spoiling, or it can be prepared ahead and reheated close to serving. Boil the pasta until al dente and drain well. Add it to the casserole together with a small handful of fresh herbs about 2 tablespoons each basil and chives, and 1 of parsley :

Alright everyone, I've been receiving some requests to post some Thai recipes, so this is my first attempt at filming and publishing a Thai street food recipe known as pad kra pao gai (ผัดกระเพราไก่), and I'm excited. When I first moved to Thailand, most of what I did was only eat, and discover all the amazing food there way. I lived in a small studio apartment without a kitchen, so I wasn't able to do much cooking or sample the many Thai recipes I had wanted to try out. But after getting married and moving into a house, we now have a kitchen, and while normally my wife and her mother do the cooking (which is outstanding by the way), I have had a chance to make some Thai street food recipes as well.
For this Thai basil chicken recipe (pad kra pao gai ผัดกระเพราไก่) here are the ingredients you'll need, but really, you should click here to see all the ingredients and directions on my website.
1 egg
2 tablespoons of oil for frying
1 chicken breast (or any other cut of boneless chicken, about 200 grams)
5 cloves of garlic
4 Thai chilies
1 tablespoon oil for frying
1 teaspoon of oyster sauce
½ teaspoon light soy sauce
½ teaspoon sugar
1 splash of dark soy sauce
1 handful of Thai holy basil leaves
1 plate of hot freshly steamed Thai jasmine rice - I also really like brown rice.
Now, the ingredients listed here for the Thai basil chicken recipe (pad kra pao gai ผัดกระเพราไก่) are what I used. But that being said, Thai food is very much a taste based cuisine, meaning that you really need to taste test your cooking. Don't just assume all these measurements are correct for your taste buds - and sometimes the seasonings we use can differ a bit. So use these ingredients and cooking directions as a guide instead of as exact measurements.

Pad Kra Pao - How to stir-fry pork with Thai basil (amazing Thai recipe)
Pad Kra Pao (stir-fried basil with minced meat) is popular Thai street food with fantastic flavor, best for a quick lunch.
It can be done at home quickly because it is pretty simple to prepare. The ingredients required are also relatively easy to get, and of course, it will guarantee you have a great appetite that needs plenty of rice to go with it.
Its flavor is derived from the trinity of Thai seasonings- fish sauce, soy sauce, and oyster sauce. And, of course, it would be complete without the generous use of bird’s eye chili that scored high on the Scoville scale.
So here is the video for preparing the Thai-style stir-fry minced pork with basil.

Recipe:

A (main ingredients)
400g ground pork
3 stalks of long beans (50g)
1 large handful of Thai basil (30g dry weight)
2 eggs
B (seasonings)
2 tbsp fish sauce
1.5 tbsp oyster sauce
1.5 tbsp light soy sauce
2 tsp dark soy sauce
2 tbsp sugar
water
C (others)
8 bird's eye chiles
4 cloves garlic
Method:
- Cut the long bean into a short section, about a quarter cm crosswise.
- Remove the stem of the bird’s eye chilies. Shake off the seeds. Cut the chiles into small sections.
- Place the chili in a mortar. Add a few cloves of based garlic. Ground the chilies and garlic into a paste until the aromatic flavor is released.
- Combine the fish sauce, oyster sauce, light soy sauce, dark soy sauce, sugar, and a tablespoon of water in a small bowl.
- Add sufficient oil into the wok enough to cover an egg. Heat the oil to medium heat, crack an egg, and place it gently at the center of the oil.
- Let it fry undisturbed until the edges bubble up and turn crispy.
- Keep some remaining oil from frying the egg in the large skillet or wok. Stir-fry the long bean until fragrant. Remove.
- Add more oil to the wok and saute the chopped chili and garlic until aromatic.
- Now add the ground meat to the wok. Loosen it with the wok spatula and stir-fry the pork until aromatic and turn slightly brown with medium heat.
- Pour the seasoning mixture and mix thoroughly with the meat.
- Throw in the Thai holy basil leaves and give it a few quick flips and stirs.
- When the leave is about to wilt, add the long beans to mix and remove from the wok.
- Dish out and serve with rice and the fried egg.
