1/3 c Cilantro, lightly packed 2 c Peaches, peeled & diced 2 c Tomatoes, diced 1 ts Lemon juice 1 pn Black pepper 1/4 ts Salt 1/2 ts Garlic, crushed 1 ts Olive oil 2 ts Balsamic vinegar Cayenne, to taste Place all ingredients in a blender or a food processor & process for a few seconds. How to make peach salsa and how to can it using the water bath processing method
When peaches are in season, I like to make and can this salsa. It's a great way to savor the peach season all winter long. Because you just add the ingredients to a pot and simmer for 30 minutes, it's easy to make. Add the fresh herb - cilantro or parsley, stir, and then can it. The other ingredients include: diced red pepper, red onion, serrano peppers, apple cider vinegar, fresh lime juice, kosher salt, sugar and crushed red chili flakes. This salsa is delicious with nacho chips or as a side for fish, pork or chicken. Peach Salsa - Lynn’s Recipes
Lynn demonstrates how to make a fresh Peach Salsa that goes great with tortilla chips and makes a great appetizer. From thekitchn.com.
Serves 6
3 ripe peaches, about 1 pound ¼ cup red onion, diced small ¼ cup red bell pepper, seeded and diced small ½-1 jalapeno pepper, minced (more or less to taste) 1 Tablespoon minced fresh mint (or more to taste) Juice from ½ lime Kosher salt, to taste
To peel peaches, fill a large stockpot with water and bring to a boil. Cut a small X into the bottom of each peach. Drop the peaches into the boiling water for approximately 1 minute. Using a slotted spoon, remove the peaches and immediately submerge into an ice bath to stop the cooking process. Gently peel the peaches using your hands or a paring knife (the riper the peach, the easier this will be). Dice the peaches into small cubes.
Combine the chopped peaches, onion, bell pepper, jalapeno, mint, and lime juice. Season with a pinch of kosher salt. Chill for one hour to allow flavors to combine and serve immediately. Serve with tortilla chips.
