1/3 c Cilantro, lightly packed
2 c Peaches, peeled & diced
2 c Tomatoes, diced
1 ts Lemon juice
1 pn Black pepper
1/4 ts Salt
1/2 ts Garlic, crushed
1 ts Olive oil
2 ts Balsamic vinegar
Cayenne, to taste Place all ingredients in a blender or a food processor & process for a few seconds. Serve immediately over hot, fresh pasta or refirgerate until ready to serve.

How to Make Peach Salsa
Ingredients
1 can organic dried tomatoes - well drained
1/4 cup chopped onion
2 tablespoons chopped fresh cilantro
1/4 teaspoon sea salt
1 garlic clove, minced
1 small fresh jalapeno chili - seeded and finely chopped
Fresh peaches
1 teaspoon of honey
A spritz of lime juice
Directions
Blend all the ingredients together and store in the refrigerator

Ingredients
Peaches - 4 ripe Peaches chopped, about 2 cups. Soft to the touch. I left the peel on, okay to remove the skin or peel.
Onion - chopped about 1 cup. I used a red/purple onion, but okay to use a white or yellow onion.
Lime or lemon juice - juice of 1/2 lime. Okay to add more lime juice to taste.
Cilantro - 1/4 cup, chopped. Okay to add more or less to taste.
Jalapeño - 1/4 chopped - optional. I removed seeds and white inner veins or piths. Okay to use jalapeño from the jar. Add a little at a time to reach your spice level.
Directions
Add chopped Peaches to a bowl.
Chop the onion into small pieces. I used about a cup. You can add more or less onion to taste.
Chop enough cilantro leaves to fill 4 tablespoons or 1/4 cup. Okay to add more or less to taste.
Add cilantro and onion to the bowl pineapple chunks.
Squeeze in the juice of 1/2 lime or lemon. Okay to use lime juice from the jar. Add more or less lime juice to taste.
Finally, add a little chopped jalapeño at a time to reach the desired spiciness.
Mix well and serve with tortilla chips or crackers, in a taco or burrito, as a tasty cool side dish, or a topping on grilled fish.
