1 c Flour
1/2 ts Baking soda
1/2 c Corn syrup
1/2 c Natural peanut butter
2 Egg whites
1/3 c Sugar
1/3 c Brown sugar
1/2 ts Vanilla extract
1 c Oats
Recipe by: Governor Jim Edgar, Illinois Combine flour and baking soda and set aside. Combine corn syrup and peanut butter and mix well. Add egg whites, sugars and vanilla. Add flour mixture and mix well. Fold in oats. Drop by rounded teaspoon on ungreased cookie sheet and bake in 375 degree oven for 8 minutes. 4-INGREDIENT BANANA OATMEAL BREAKFAST COOKIES
2 large brown bananas or 3 small (14-16 ounces)
1/2 cup all-natural creamy peanut butter
2 cups rolled oats (160 grams)
1/3 cup chocolate chips
Preheat oven to 350 F. Line a rimmed baking sheet with parchment paper or a Silpat mat and set aside. Mash bananas in a medium bowl using the back of a fork. Break them up until they are like a banana puree.
Add in the peanut butter and stir until well combined.
Stir in the oats and mix until everything is incorporated and then gently fold in the chocolate chips.
Scoop 1 tablespoon of dough into your palms and shape it into a cookie. Place on baking sheet and repeat. Note: the cookies don’t spread when baking, so you want to shape them into a cookie now.
Bake for 10 minutes or until lightly browned and set though. Repeat with extra batter, cool, and enjoy!
NOTES:
Storage: Keep cookies stored in an airtight container in the refrigerator for up to five days.
Freezing Instructions: Cookies can be frozen for up to 3 months, then thawed overnight in the refrigerator before enjoying.

Peanut Butter Oatmeal “Cookies” | Life Unbinged
This is a very healthy and simple, yet delicious breakfast recipe! It is one of my favorite and I encourage you to try it too!!
INGREDIENTS
1 oz. oats
1.5 oz. peanut butter
0.5 oz. walnuts
4 oz. banana
2 oz. blueberries
1/2 tsp. Cinnamon
DIRECTIONS
1. Mix all ingredients together (except blueberries)
2. After all ingredients are mixed together, divide into four portions
3. Place each portion on a baking sheet
4. Divide blueberries evenly among the four cookies and press them slightly into each cookie
5. Bake at 400 degrees for approx. 20 minutes
6. Pull them out of the oven and enjoy a delicious healthy meal!

Healthy Peanut Butter Oatmeal Cookies - 2 ways
This is one of my favorite recipes. I hope you like it.

Ingredients
1st Method:
1 Egg
2 tbsp Honey
1/2 cup Peanut Butter
1/2 cup Oats
2nd Method:
1 Egg
2 tbsp Honey
1 cup Peanut Butter
1/2 cup Oats Flour
Directions
1st Method:
Whisk egg, honey and peanut butter.
Once the peanut butter is blended well, add oats and blend well.
Take small amount and give a cookies shape. Place it on baking tray.
Bake in pre-heated oven for 15-20 minutes.
I would suggest to bake 10 minutes and check in between.
2nd Method:
Grind Oats in a blender to make Oats Flour.
Whisk egg, honey and peanut butter.
Once the peanut butter is blended well, add oats flour and blend well.
Take small amount and give a cookies shape. Place it on baking tray.
Bake in pre-heated oven for 20-25 minutes.
I would suggest to bake 10 minutes and check in between.
