Walnut Pear Coffee Cake
THEE most delicious coffee cake you will ever have! The pears shine and make this a wonderful breakfast cake, or dessert. It will disappear in moments.
1 C chopped walnuts
1/3 C brown sugar
1/4 C cold butter
1 tsp Cinnamon
FILLING:
2 ripe pears, peeled and sliced (about 2 cups)
2 tsp lemon juice
1/2 C butter, softened
1 C sugar
2 eggs
1 tsp vanilla
1 3/4 C all-purpose flour
3/4 tsp baking powder
1/2 tsp soda
1/4 tsp salt
1 C sour cream
In bowl, combine walnuts, brown sugar and cinnamon: set aside. Place flour in a small bowl and cut in butter until it resembles coarse crumbs. Stir in 3/4 cup of the nut mixture; set aside for the topping. The rest will go in the filling. Toss pears in lemon juice and set aside.
In a mixing bowl cream butter and sugar, add eggs and vanilla. Add flour, baking powder, soda, and salt then add sour cream. Mix well. Spread 2/3 of the batter into a greased 9 springform pan. top with reserve nut mixture, pears and remaining batter. Sprinkle with walnuts and reserve topping mixture. Bake at 350° for 50-55 minutes. cool on wire rack for 10 minutes - remove sides of pan. Cool for another hour before removing the bottom pan from the cake.

Italian Apple and Pear Cake with Raisins
This apple and pear cake is a variation from the Italian Umbrian specialty. It is rich in fruit containing at least 80 percent fruit and is deliciously soft and moist.
The addition of delicate pears and soaked raisins brings this recipe to another level.
The rum is totally optional, but if you like the taste of rum in your desserts, please add it in, you will love this.
Cover and refrigerate once cooled down, and it’s best to serve it warm. Try and use good quality cooking pears and apples for a better result.
For the cake pan, the size I used is a 9inch - 23cm spring form.

Delicious & Quick Fluffy Apple Cake / Easy Recipe
This easy apple cake is a delicious dessert that's perfect for any occasion. The cake has a light and fluffy texture and is infused with the sweet and tangy flavors of apples and lemon juice. The cake batter is made with a combination of eggs, sugar, yogurt, milk, sunflower oil, and vanilla extract. This creates a moist and tender crumb that is perfectly complemented by the sweet and slightly tart apple slices.
To make the cake, you'll need 2 apples, which you'll need to peel and slice into thin pieces.In a pan, melt 25 grams of butter and add apple slices, add 15 grams of lemon juice and 20 grams of sugar. Cook the apple slices in the mixture until they soften a little.
Next, prepare a cake batter by whisking 2 eggs with 130g of sugar, adding 60g of yogurt, 60ml of milk, 60ml of sunflower oil, and a dash of vanilla extract to the egg mixture and whisk until well combined. Sift 200g of flour and 8g of baking powder into the mixture and gently fold until the batter is smooth.
Pour the cake batter into a greased 18cm cake pan and arrange the cooked apple slices on top.
Bake the cake in a preheated oven at 180°C for 40-50 minutes or until a toothpick inserted into the center of the cake comes out clean. Once the cake is done, let it cool in the pan for 10-15 minutes before removing it from the pan and placing it on a wire rack to cool completely. If you like, you can grill the cake for an additional 2 minutes until the top is golden brown. This apple cake is a crowd-pleaser and is sure to become a family favorite!

Apples: 2 medium-sized

Lemon juice: 15g (1 tbsp)
Sugar: 20g (2 tbsp)
For the cake batter:
2 Eggs (room temperature)
Sugar: 130g (2/3 cup)
Yogurt: 60g (1/4 cup)
Milk (room temperature): 60 ml (1/4 cup)
Sunflower oil: 60 ml (1/4 cup)
Vanilla extract: 1 tsp
Flour: 200g (1 and 1/2 cups)
Baking powder: 8g (1 and 1/2 tsp)
Note: These measurements are approximate and may vary slightly depending on the density of the ingredients and the accuracy of the measuring tools used. It's always best to use a kitchen scale for the most accurate measurements.

To start, gather your ingredients: flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, butter, sugar, brown sugar, eggs, vanilla extract, sour cream, milk, pears, and powdered sugar.
In a large mixing bowl, combine the flour, baking powder, baking soda, salt, ginger, cinnamon, and nutmeg. Mix well to ensure all the ingredients are evenly combined.

Gluten Free Pear Buckle - AKA Coffee Cake | Chef Terry
A buckle is a type of coffee cake with added fruit. Berries are usually added but since it is fall and pears are being harvested I chose them as my fruit. I also added dried blueberries, because I had them on hand. I also made this another gluten free recipe.

Eggless Pear Cupcakes
Cupcake without egg / Cupcake without Milk / Cupcake without Butter.
These SIMPLE VEGAN PEAR CUPCAKES are super moist, loaded with pears and topped with crunchy coarse sugar.
These eggless, dairy free Pear Cupcake are perfect for breakfast, afternoon tea or anytime of the day.
Makes 12 cupcakes.
✅ Ingredients:
3 Medium Size Pears (350 g), sliced thinly
3/4 cup (150 g) Superfine Granulated Sugar
1/2 cup (120 ml) Water
1/4 cup (60 ml) Vegetable Oil
1 tsp (5 ml) Vanilla Extract
1 cup (140 g) All-Purpose Flour
2 tsp (8 g) Baking Powder
Coarse sugar for toppings
Bake at 350oF (180oC), rack middle position, 18-20 minutes, or until toothpick inserted in the middle of cake comes out clean.
* It is very important to PREHEAT the oven. Bake when oven reaches the right temperature.
* All oven are not the same. If toothpick inserted in middle of cake comes out clean, cake is done.
* Mix dry ingredients and wet ingredients until JUST combined and dry flour is no longer visible. Do not overmix the batter or the cake will be dense.
