Rosalba's Sicilian cooking class - Fried zucchini balls and Sicilian love songs
Hello everyone,
we are Rosella and Gianca, 2 proud native Sicilian travel consultants with a strong passion for our beloved island! We take pride in sharing Sicily's beauties and the most authentic culture of Sicily.
This time our special guest is Rosalba (Gianca's mom). Rosalba will share with you the recipe of the “Fried Zucchini Balls”. The original recipe is with eggplants. She re-invented this dish using the Genovese zucchini, a particular kind of zucchini that we grow in Sicily.
“Fried Zucchini Balls” is a very easy and simple dish (made with organic vegetables). Even if you have no particular culinary skills or you have a short time to cook you will enjoy the result!
INGREDIENTS FOR 4 PEOPLE:
4 medium zucchini
10 chopped mint leaves
1 egg
2 tablespoons of breadcrumbs
2 tablespoons of raisins
2 tablespoons of grated cheese (we prefer pecorino, parmigiano, grana padano)
1 tablespoon of pine nuts
sunflower oil for frying q.s.
salt to taste.
Instructions:
1) Cut the zucchini into cubes and drop them into a pot with boiling water (already salted) and cook until very tender (about 15 minutes).
2) Let them stand in a colander for at least 2-3 hours and then squeeze them in order to get all the water out.
3) In a bowl put all the ingredients: zucchini, 1 egg, 2 tablespoons of raisins, 1 tablespoons of pine nuts, 2 tablespoons of grated cheese, 2 tablespoons of breadcrumbs, 10 chopped mint leaves. Mix everything well. If the mixture it is too soft, add more breadcrumbs.
4) Make your round balls
5) In a dish place some breadcrumbs and turn your balls in the breadcrumbs until well coated all over.
6) In a frying pan put the sunflowers oil to fry the balls until crispy and golden brown. Use a generous quantity of sunflower oil; the balls must be totally immersed in the oil. This is a secret to get light, less greasy fried food. It is also better to divide the quantity of the balls to be fried in two times. Another secret is the temperature of the oil: high temperature helps keep the oil out of the food.
7) Place the fried zucchini balls on a paper towel to absorb excess oil.
8) Enjoy it!
