How To make Penne Pasta w/Tomatoes & Chile
4 tb Crushed red chile
1/2 c Sun-dried tomatoes, cut in
Slivers 1 c Black olives, cured in oil,
Pitted and halved 1/2 c Fresh basil, chopped
1/2 c Fresh Italian parsley,
Chopped 1 tb Grated lemon peel
3 cl Garlic, minced
1/2 c Olive oil
2 tb Oil from the tomatoes
2 ts Freshly ground black pepper
3/4 lb Parmesan cheese, grated
1 lb Penne pasta

Cook the pasta in 4 quarts of boiling salted water until tender but still firm - 'al dente'. Drain. Toss the pasta with the sauce and cheese until well coated and serve. Serves: 6 Heat Scale: 5

Penne Pasta with Sausages
Serves 4-5
Recipe in English:
Ingredients:
-Mon Salwa Supremo Chicken cheese sausages 8 pieces
-Tamatar (Tomatoes) 4 large
-Cooking oil 3-4 tbs
-Lehsan (Garlic) chopped ½ tbs
-Pyaz (Onion) chopped 1 medium
-Namak (Salt) 1 tsp or to taste
-Kali mirch powder (Black pepper powder) 1 tsp
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Red/Green chillies chopped 3-4 (optional)
-Water ¼ Cup or as required
-Penne pasta 300g (boiled as per pack’s instructions)
-Cheddar cheese grated ¾ Cup
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Fresh parsley chopped
Directions:
-Cut chicken cheese sausages into thin slices & set aside.
-Fire roast tomato over medium flame until skin is charred and remove charred skin & discard then roughly chop tomatoes & set aside.
-In a wok,add cooking oil,garlic & mix well.
-Add onion,mix well & sauté until translucent.
-Add sausages,mix well & cook for 1-2 minutes.
-Now add chopped tomatoes,mix well & cook for 2-3 minutes.
-Add salt,black pepper powder,red chilli powder,red/green chillies & mix well.
-Add water,cover & cook on low flame for 2-3 minutes.
-Add boiled pasta & give it a good mix.
-On low flame,add cheddar cheese,fresh coriander & mix well,cover & cook on low flame for a minute.
-Garnish with fresh parsley & serve!

-Tamatar ko chulhay per charred ho janay tak darmiyani ancch per fire roast ker lein aur charred skin ko nikal lein phir tamatar ko roughly chop ker lein & side per rakh dein.
-Karahi mein cooking oil aur lehsan dal ker ache tarhan mix ker lein.
-Pyaz dal ker ache tarhan mix karein aur translucent hunay tak sauté ker lein.
-Sausages dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
-Ab chopped tamatar dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Namak,kali mirch powder,lal mirch powder aur red/green chillies dal ker ache tarhan mix karein.
-Pani dal ker dhak dein aur halki ancch per 2-3 minutes kliya paka lein.
-Boiled pasta dal ker ache tarhan mix ker lein.
-Halki ancch per cheddar cheese aur hara dhania dal ker ache tarhan mix ker lein aur dhak ker halki ancch per ek minute kliya paka lein.
-Fresh parsley sa garnish ker ka serve karein!

So today I finally uploaded the recipe that I use for my penne arrabiata :) We have this quite often for out tea and have been asked so many times for a recipe…so here it is! This recipe will serve 4 people but add more pasta and tomatoes to the sauce if you want to spin it out for more people. This is so easy to make an absolutely delicious…I hope you love it as much as we do.

What I used: Serves 3-4 (add more pasta and canned tomatoes id you’re feeding more people)
300g (11 oz) Penne pasta
Olive oil for frying
3 Cloves garlic - sliced
1 Large onion - finely diced
3 Red chillies - finely sliced
12 Baby tomatoes
1 Standard can of chopped tomatoes
1 Tablespoon tomato puree
1 Teaspoon chopped chillies (optional)
A few basil leaves - chopped
Shaved parmesan
Salt & pepper

Servings; 4
To Make Pink Sauce Pasta
Penne Pasta - 3 Cups ( 1 Cup - 250 Ml )
Tomato - 8 Nos
Butter - 75 Gms
Oil - 1 Tbsp
Garlic - 10 Cloves
Onion - 1 No.
Green Capsicum - 1 Cup
Red Capsicum - 1 Cup
Sweet Corn - 1 Cup
Salt - 1 Tsp
Pepper - 1 Tsp
Red Chilli Flakes - 1 Tsp
Italian Seasoning - 2 Tsp
Maida - 2 Tbsp
Milk - 1 Cup
Tomato Ketchup - 1 Tbsp ( Optional )
Paprika Powder - 1 Tsp ( Optional )
Cheese Slices - 4 Nos
Basil Leaves
Method:
1. Take a pot, add water and salt. Drop in the Penne Pasta shells and cook them until 90% cooked.
2. Once done, remove them from the pot, strain and keep them aside.
3. To another pot, add water and boil. Gently drop in the slightly slit tomatoes and cook them until they outer skin shrinks.
4. Remove the tomatoes from the pot, remove the skin, chop them into pieces and grind them into a fine puree. Keep the tomato puree aside.
5. Add butter and oil to a pan. Once the butter melts, add the chopped garlic and onions.
6. Saute for about two minutes and add in the chopped green and red capsicum.
7. Mix well and add the cooked sweet corn.
8. Cook the veggies for 2-3 minutes and then add salt, pepper powder, Chilli flakes, Italian seasoning.
9. Add maida to the mixture and mix it all well. Add in the milk and quickly mix well.
10. Cook this for 3-4 minutes and then add in the tomato puree. Cook for 3-4 minutes again.
11. Add tomato ketchup, paprika powder, cheese slices and mix well. Dilute the sauce with some milk if it is too thick.
12. Add in the cooked penne pasta and give it all a nice mix. Cook the pasta for about 5 minutes again.
13. Lastly, add the basil leaves, mix and turn off the stove.
14. Delicious Pink Sauce Pasta is ready to be served.

Onion Tomato Spice-Mix/Sauce
3-4 tbsp Oil
1 tsp Cumin Seeds
1 cup Onions (chopped)
Salt (as required)
1 tbsp Ginger-Garlic & Green Chilli Paste
1/2 cup Tomato Pulp
1 tsp Turmeric Powder
1 tsp Red Chilli Powder
1 tsp Garam Masala Powder
**The Spice-Mix can be stored in the refrigerator for 30 days.
Boiling the Pasta
1 ltr Water
1 tsp Salt
1 cup Penne Pasta
Preparing the Pasta
200 gms Chicken Breast (cut into batons)
1 tsp Dried Fenugreek Leaves
1/4 cup Pasta Water
2 tbsp Fresh Cream
1/4 tsp Dried Fenugreek Leaves
