How To make Peppermint Kisses
2 egg whites
1/8 teaspoon salt
1/8 teaspoon cream of tartar
1/2 cup sugar
2 peppermint candy canes (1 green, 1
ushed
In a mixing bowl, beat egg whites until foamy. Add salt and cream of tartar; beat until soft peaks form. Beat in sugar, 1 Tablespoon at a time, until stiff and glossy. Spoon meringue into a pastry bag or resealable plastic bag. If using a plastic bag, cut a 1" hole in a corner. Squeeze 1-1/2" kisses of meringue onto ungreased foil-lined baking sheets. Sprinkle half with red crushed candy canes and half with green candy canes. Bake at 225 degrees for 1-1/2 to 2 hours or until dry but not brown. Cool; remove from foil. Store in an airtight container.

Peppermint meringue cookies | 12 days of EASY Christmas cookies (Day 10)
For the 10th easy cookie recipe we are making easy peppermint meringues topped with festive Christmas sprinkles. These meringues have a wonderfully light, crisp texture and literally melt in your mouth! With just hint of peppermint flavour these festive meringue cookies are perfect for the holidays. They can be made well ahead of Christmas and stored for up to 2 weeks in an airtight container, making this an easy make ahead Christmas cookie recipe!
Peppermint meringue cookies recipe
3 large room temperature egg whites (approx: 90-120g)
1/8 teaspoon cream of tartar (approx 0.66g)
2/3 cup granulated white sugar (134g)
1/4 teaspoon peppermint extract (1.2g)
2 tablespoons sprinkles (optional) (20-25g)
Directions:
Preheat your oven to 160F/75C. In the bowl of a stand mixer fitted with the balloon whisk attachment beat the egg whites on medium speed for about a minute, or until they are nice and foamy. Add cream of tartar and continue beating for another minute or until well incorporated. Begin adding the sugar 1 tablespoon at a time, mixing well after each addition. The process of adding and mixing in the sugar will take around 5-6 minutes. Once all of the sugar has been added, scrape down the sides of the bowl, add the peppermint extract and continue mixing on medium speed for another minute or until all of the sugar is dissolved and you have a nice smooth glossy meringue with a nice stiff peak.
Transfer your meringue into a piping bag fitted with your desired tip. I'm using a 2d closed star tip. Use a small amount of meringue to attach your parchment to you baking sheet. Pipe meringue into desired size/ designs. For a rosette, begin in the middle and spiral your way out until its your desired size. Release pressure and continue that spiral motion as you pull away. For the second shape, start on the outside, spiraling your way toward the center, and tapering off at the top before sharply pulling away. Top with sprinkle if using and bake for 90-120 minutes depending on the size of your meringue cookies. Mine are 1.5-2.5 diameter so I baked them for the full 2 hours, smaller cookies will require less time. Once they are done baking, open your oven a couple inches and leave the pans in the oven for 30 minutes. The gradual change in temperature helps reduce the amount of cracking. Store your peppermint meringues in an airtight container, and these will keep at room temperature for a couple weeks.
