2 c All purpose flour 2 c Sugar 1/2 lb Butter 2 ts Unsweetened cocoa 1 c Pepsi cola 1/2 c Buttermilk 2 Eggs, beaten 1 t Baking soda 1 t Vanilla extract 1 1/2 c Miniature marshmallows 1 Peanut butter frosting -- rec -pe Preheat oven to 350 degrees. Grease and flour a 9 x 13 x 2" pan. Combine flour and sugar in a large bowl. Melt butter. Add cocoa and Pepsi Cola. Pour over flour mixture. Stir until well blended. Add buttermilk, beaten eggs, soda and vanilla. Stir in marshmallows. Mix well. Pour into prepared pan. Bake 40 minutes. Remove from oven and frost while still warm with Peanut Butter Frosting. Makes 20 - 2 x 3" servings.

Coca-Cola cake with Broiled Peanut Butter Frosting
2 cups all purpose flour 2 cups sugar 1 cup (sticks) butter, melted 2 tbls unsweetened cocoa powder 1 cup Coca -- Cola with fizz ½ cup buttermilk 2 eggs, beaten 1 tsp baking soda 1 tsp vanilla extract 1 ½ cups miniature marshmallows Broiled Peanut Butter Frosting 6 tbs butter 1 cup dark brown sugar 2/3 cup smooth peanut butter ¼ cup milk 2/3 cup chopped peanuts (optional)
Preheat oven to 350 degrees. Grease and flour 9x13x2 pan. In a large bowl combine the flour and sugar. In another bowl combine the butter, cocoa powder, and coke. Pour this over the flour and sugar mixture. Stir until it is well blended. Add the buttermilk, eggs, baking soda and vanilla. Mix well. Stir in marshmallows. Pour into the prepared pan. Bake for 40 minutes. Remove the cake from the oven and frost it while still barely warm.
For the broiled peanut butter frosting, in a medium size bowl beat the butter, brown sugar and peanut butter together. Beat in the mild. Fold in the peanuts. Spread over the cake under the broiler broil just a few seconds or until the topping starts to bubble. Watch constantly and be careful not to scorch the frosting.
