How To make Mimosa Cake with Lemon Butter Cream Frosting
1 1/4 c Sifted cake flour
1 1/2 c Sugar
10 Egg whites
1 1/2 ts Cream of tartar
1/4 ts Salt
4 Egg yolks
1 ts Grated lemon rind
1 ts Vanilla
1. Preheat oven to 375.
2. Sift flour and 1/2 cup of the sugar onto wax paper; set aside.
3. Beat egg whites, cream of tartar and salt in a large bowl with electric
mixer at high speed until foamy. Beat in remaining 1 cup sugar, 1 tablespoon at a time, until meringue forms soft peaks. 4. Fold flour mixture into meringue, one-third at a time, until completely
blended. 5. Beat egg yolks in a small bowl with electric mixer at high speed until
thick and lemon colored. Beat in lemon rind and vanilla. 6. Fold half of the meringue batter into the beaten egg yolks until no
streaks of white remain. 7. Spoon batters by tablespoonfuls, alternating colors, into an ungreased
10-inch tube pan. (Do no stir batters in pan.) 8. Bake in preheated oven
for 35 minutes, or until top springs back when lightly pressed with fingertip. 9. Invert pan, placing tube over quart-size soft-drink bottle; let cake
cool completely. Loosen cake around the edge and the tube with a spatula. Cover pan with serving plate; turn upside down; shake gently; remove pan. 10. Frost with lemon flavored butter cream frosting.

Mimosa cake: the perfect dessert for celebrate the women’s day!
INGREDIENTS
For the biscuit:
6 eggs
200g (1 cup) sugar
a pinch of salt
Peel 1 lemon
150g (1.2 cup) flour
50g (0.4 cup) cornstarch
For the cream:
340ml (1.4 cup) whole milk
60g (0.3 cup) sugar
5 egg yolks
20g (2 1/2 tbsp) cornstarch
10 g of lemon zest
200ml (0.85 cup) fresh cream
For a bath with limoncello:
100ml of water
70g (0.3 cup) sugar
100ml of limoncello
METHOD
To prepare the biscuit, beat the eggs, sugar and lemon zest into a frothy mixture, then add the flour, starch and salt.
Pour into a 22 cm mold.
From half of the biscuit mixture, make another biscuit that you will need to coat the cake.
Bake in a preheated oven at 180 ° C for about 30 minutes.
Prepare the cream by pouring milk into a bowl and heating over low heat, then add sugar, egg yolks, starch and lemon zest. Stir constantly until the mixture becomes thick. When the mixture has cooled add the whipped cream and mix.
Prepare a topping of lemongrass, sugar and water. Heat the ingredients.
Cut the crust into three parts. Coat with topping and fill with cream. Coat the whole cake with cream and arrange the biscuit pieces.
Cool the cake before serving.
