Pesto Chicken Tikka
If the Italians try this, they’ll just go mama mia ????????
INGREDIENTS
1 cup fresh basil leaves
1 cup fresh mint leaves
1/3 cup walnuts.
3 cloves garlic, minced
1/4 tsp salt, or more to taste
1/8 tsp freshly ground black pepper
2 green chillies
2tbsp oil
2 cup chicken chunks
1cup pesto sauce
1/4th cup curd
1/2 tsp amchur powder
1/2 tsp garam masala
1/2 tsp red chilli powder
Salt according to taste
Oil for frying
INSTRUCTIONS
Place the basil leaves, mint leaves, nuts, garlic, salt, ground pepper, green chillies and oil in a blender and blend it well.
Now add the chicken chunks, pesto paste, curd, amchur powder, garam masala, red chill powder and salt mix well, coating every single piece with the marinade.
Let this sit for a minimum of 30 minutes.
In a pan add a tbsp of oil and roast these chicken chunks on a low flame until they are slightly charred on the edges.
Serve it with some onions and mint chutney.

Ingredients:-
For pesto sauce:-
2 cups packed fresh Basil leaves
4 cloves of Garlic, peeled
¼ cup Pine nuts/Cashew nuts
⅔ cup Extra-virgin olive oil, divided
Salt and freshly ground black pepper, to taste
½ cup freshly grated Pecorino/ Parmesan cheese
Salt to taste
12-15 strips Chicken breast, boneless
Cherry tomatoes
Fresh basil leaves for garnish
Method:-
The Pesto Sauce:-
- Grind basil leaves, garlic, cashew nuts, parmesan cheese, salt, pepper and olive oil to a fine paste.
The Marination:-
- In a bowl add the chicken, pesto sauce, salt, olive oil and mix thoroughly. Let it marinate for a minimum of 30 minutes.
The Cooking:-
- In a pan heat oil and place the gashed side of the chicken on the pan and sear on high flame for 2 minutes.
- Flip the chicken pieces and sear for 2 minutes basting it with the pesto sauce.
- Lower the flame, tilt the pan and pour the accumulated oil on the chicken pieces.
- Cover with the lid and cook on low flame for 10-12 minutes OR bake in the oven at 200°C for 12 minutes.
- Cut the cherry tomatoes into halves and saute the tomatoes in the same pan by tilting it on high flame.
- Serve with sauteed cherry tomatoes and garnish with basil leaves.

Pesto or pesto alla genovese is a sauce originating in Genoa, the capital city of Liguria, Italy. It traditionally consists of crushed garlic, European pine nuts, coarse salt, basil leaves, and hard cheese such as Parmigiano-Reggiano or Pecorino Sardo all blended with olive oil.
One-Pan Garlic Chicken Pesto Pasta
Recipe:
Serves 4
Ingredients:
1 tablespoon canola oil
2 chicken breasts, sliced into ½-inch strips
2 tablespoons garlic, chopped
½ tablespoon kosher salt
½ tablespoon freshly ground black pepper
¾ cup heavy cream
½ grated parmesan cheese
¼ cup pesto
3 cups penne pasta, cooked and drained
¾ cup cherry tomatoes, halved
Parmesan cheese to garnish
Chopped basil to garnish
Preparation:
Heat the oil in a pan over high heat. Combine the chicken, garlic, salt, and pepper, cooking until chicken is browned. Mix in the heavy cream, parmesan, and pesto, stirring until evenly combined. Bring to a boil and cook until the sauce has reduced, about 5-7 minutes. Toss in the pasta and cherry tomatoes, stirring until evenly coated. Remove from heat. To serve, sprinkle parmesan cheese and basil on top!
