How To make Pickled Dilled Beans
4 lb Fresh tender green beans
OR yellow beans :
(5 to 6 inches long) 8 -to...
16 Heads fresh dill
8 Garlic cloves (optional)
1/2 c Canning or pickling salt
4 c White vinegar (5 percent)
4 c Water
1 t Hot red pepper flakes

Procedure: Wash and trim ends from beans and cut to 4-inch lengths. In each sterile pint jar, place 1 to 2
dill heads and, if desired, 1 clove of garlic. Place whole beans upright in jars, leaving 1/2-inch headspace. Trim beans to ensure proper fit, if necessary. Combine salt, vinegar water, and pepper flakes (if desired). Bring to a boil. Add hot solution to beans, leaving 1/2-inch headspace. Adjust lids and process according to the recommendations in Table 1. Table 1. Recommended process time for Pickled Dilled Beans in a boiling-water canner. Style of Pack: Raw. Jar Size: Pints. Process Time at Altitudes of 0 - 1,000 ft: 5 min. 1,001 - 6,000 ft: 10 min.

How To Can Dilly Beans
Here's how I can dilly beans. The recipe is from my favorite canning book called Putting Food By.
Dilly Beans
4 pounds green beans
1 3/4 tsp. crushed dried hot red pepper
3 1/2 tsp. dried dill seed or 7 fresh dill heads
7 cloves of fresh garlic, peeled
5 cups water
5 cups distilled white vinegar
1/2 cup less 1 tbsp. pickling salt
Wash beans thoroughly, remove stems and tips, and cut them as much as possible in uniform lengths to allow them to stand upright in 1 pint canning jars, coming to the shoulder of the jar. Have jars clean and very hot, and lids and sealers ready in scalding water. In each jar place 1 dill head or 1/2 teaspoon dill seed, add 1 garlic clove and 1/4 teaspoon crushed hot red pepper. Pack beans upright in jars, leaving 1 inch of headroom. Heat together the water, vinegar and salt; when the mixture boils, pour it over the beans, filling each jar to 1/2 inch from the top. Run a plastic knife down and around to remove trapped air, adjust lids and process in a boiling water bath for 5 minutes (I process them for 10 minutes because 10 minutes is required for sterilization of the jars). Makes 7 pint jars.

CANNING PICKLED GREEN BEANS | Trying a Dilly Bean Recipe
We’re canning pickled green beans with dill for the first time! This is a water bath method for canning green beans.
We are lucky to have had an abundance of green beans this year. Thanks to succession planting our bushing green beans, and the super prolific pole green bean plants we have been harvesting green beans every day! We love green beans so it works out.
Being that we like green beans so much, and we love pickles… we hope that this will be a recipe that we like!
