Cheesecake sin horno de piña colada

Ve la receta AQUÍ:
Ingredientes:
10 piezas de galleta de piña, como barritas, para la base
1/4 de taza de mantequilla derretida, para la base
1 cucharada de canela molida, para la base
1/4 de cucharada de sal para la base
1 pieza de queso crema
5 rebanadas de piña en almíbar con un poco de almíbar
1 taza de azúcar
suficiente de ron blanco
1 taza de crema de coco
4 tazas de queso crema
2 sobres de grenetina hidratada y fundida (7g c/u)
1 taza de crema batida para decorar
1 1/2 tazas de piña en almíbar cortada en cubos, para decorar
1 taza de coco tostado, para decorar
suficiente de cerezas para decorar

❤Para la base de galleta:
.1 taza de galletas molidas (graham's cookies)
.2 cucharadas de azúcar
.1/2 cucharadita canela en polvo
.2 cucharadas coco rayado
.3 cucharadas mantequilla derretida
❤Para el relleno:
.8 onzas queso crema a temperatura ambiente
.1/4 taza azúcar
.2 huevos
.1/4 taza leche de coco
.1/4 taza jugo piña
.1 cucharada ron blanco
.1 cucharadita de vainilla
.1 pizca sal
❤For the cookie base:
.1 cup graham's cookies
.2 tablespoons sugar
.1/2 teaspoon ground cinnamon
.2 tablespoons grated coconut
.3 tablespoons melted butter
❤For the filling:
.8 ounces cream cheese at room temperature
.1/4 cup sugar
.2 eggs
.1/4 cup coconut milk
.1/4 cup pineapple juice
.1 tablespoon white rum
.1 teaspoon vanilla
.1 pinch salt

Pinacolada Cheesecake | Valentines Day Special | Sanjeev Kapoor Khazana
A rich, creamy cheesecake filling, infused with cream of coconut and pineapple chunks make this piña colada cheesecake a delicious dessert.
PINACOLADA CHEESECAKE
Ingredients
5-6 canned pineapple slices
½ cup cream cheese
¼ cup tinned pineapple syrup
1 star anise
8-10 digestive biscuits
2 tablespoons melted butter
1½ teaspoon gelatin
2 tablespoons hung yogurt
½ cup condensed milk
¼ cup coconut cream
A drop of edible yellow colour
1½-2 cups whipped cream
Fresh mint sprig for garnishing
Method
1. Chop pineapple and transfer in a bowl.
2. Heat pineapple syrup in a non-stick pan. Add star anise, swirl and bring to boil. Remove from heat, add to chopped pineapple, cover with cling film and refrigerate it.
3. Grind broken biscuits to make a fine powder and transfer in another bowl. Add butter and mix well till it resembles breadcrumbs.
4. Line a serving jar with biscuit-butter mixture and press gently. Refrigerate.
5. Take ¼ cup water in a microwave proof bowl. Sprinkle gelatin and set aside to bloom.
6. Combine cream cheese, hung yogurt and condensed milk in a bowl and whisk well. Add coconut cream and whisk. Add edible yellow colour and whisk well.
7. Heat bloomed gelatin in microwave for 1 minute.
8. Add whipped cream to cream cheese mixture and fold well. Add some of this mixture to bloomed gelatin and mix well.
9. Add the gelatin-cream mixture to remaining cream mixture and fold well. Pour the cream cheese mixture in the lined jar and tap. Refrigerate till semi-set.
10. Put the cooked pineapple and a star anise on top of cheesecake. Garnish with a mint sprig and refrigerate till fully set.
11. Serve.

Ingredients:
Cake:
- 100 grams (~3/4 cup) all-purpose flour
- 150 grams (~3/4 cup) sugar
- 30 grams (~4 tablespoons) corn starch
- 5 egg whites
- 5 egg yolks
- 1 teaspoon baking powder
- 1 teaspoon coconut extract (can be substituted with vanilla extract)
Pineapple Filling:
- 1 can (20 oz) crushed pineapple (in juice or syrup, whatever you prefer)
- 1 tablespoon corn starch
- 3 tablespoons lemon juice
- 1 tablespoon Malibu rum (optional, can also be substituted with 1 teaspoon of any other non-alcoholic extract)
Coconut Filling:
- 1 can (400 ml) coconut milk
- 50 grams (1/4 cup) sugar
- 3 tablespoons corn starch
- 150 grams (2 cups) coconut flakes
- 1 tablespoon Malibu rum (optional, can also be substituted with 1 teaspoon of any other non-alcoholic extract)
Mascarpone Whipped Cream Frosting:
- 1 1/4 cup (300 ml) cold heavy cream
- 225 grams (8 oz) cold mascarpone cheese
- 60 grams (1/2 cups) powdered sugar
- 1 teaspoon coconut extract (can be substituted with vanilla extract)

Pina colada cheesecake trifle:
Ingredients
coconut cookies 4 packets
Whipped cream 300 gm
Desiccated coconut 1 cup
Flaked coconut 2 cups
Pound cake slices as required
pineapple tidbits 1 tin
Cream cheese 200 gm
Pineapple essence few drops
Caster sugar ¾ cup
Coconut cream 4 tbsp
Pineapple syrup to soak cake
Method
Put coconut cookies on the bottom of a dessert bowl, sprinkle with pineapple syrup, beat cream cheese in a bowl with sugar, coconut cream, coconut essence, fold in whipped cream into cheese mixture, spoon half the mixture over cookies, spread with pineapple chunks, top with pound cake cubes, moist cake cube with pineapple syrup, pour over the remaining cheesecake mixture, decorate with pineapple cubes and coconut, serve chilled.
Chicken tortilla soup:
Ingredients
Chicken breast cut in cubes 1
Tomato puree 1 cup
Stock 3 cups
Cream of corn 1 can
Onion chopped 2 tbsp
Garlic paste ½ tsp
green chili chopped 1
Soya sauce 2 tbsp
Vinegar 2 tbsp
Sriracha Extra Hot 2 tbsp
Salt 1 tsp
Black pepper ½ tsp
Baked Tortilla strips as required
Method
In a pan put chicken, tomato puree, stock, cream of corn, onion, garlic paste and green chilies, cover and cook for 30 mins, then add soya sauce, vinegar, sriracha extra hot, salt and pepper, cook for another 10 mins, remove in soup bowls, garnish with parsley, serve hot with crisp tortilla strips.
Tarragon chicken pasta:
Ingredients
Pan pasta boiled 3 cups
Tikka boti ½ packet
Garlic crushed 1 tbsp
Black pepper 1 tsp
Salt 1 tsp
Plum Chili sauce 3 tbsp
Soya sauce 3 tbsp
Mustard paste 1 tsp
Chicken powder 1 tbsp
Oil ¼ cup
Ingredients for tarragon sauce
Cream 3 packets
Garlic powder 1 tsp
Salt ½ tsp
Black pepper ½ tsp
Chicken powder 1 tsp
Dried tarragon 1 tsp
Mustard powder 1 tsp
Cream cheese 3 tbsp
Method
Boil pasta keep aside. Marinate chicken with all the given ingredients and pan fry for 10 mins.
Method for sauce
Scald cream in a pan, add all the ingredients to make tarragon sauce, toss pasta in this sauce, mix in the sauté chicken and serve garnished with parsley.
