VIRGIN PINA-COLADA:-
2 cups Pineapple, roughly chopped
1 cup thick coconut milk
1 tbsp lemon juice
8-10 Ice cubes
2 tbsp sugar
Few Pineapple wedges
STRAWBERRY SPITZER:-
Lemon slice & Sugar
For the glass rim
Crushed ice
3/4 cup coconut water
1/4 cup club soda/sparkling tonic water
1 lemon slice
Strawberry Purée:
1 cup strawberries
4 tbsp sugar
2 tbsp lime juice
Garnish:-
Chopped strawberries
Sprig of mint
VANILLA MATCHA LATTE:-
2 tbsp vanilla extract
Ice cubes
1 cup thickened, chilled milk
1 tbsp honey or agave syrup
3-4 tbsp warm matcha tea
ICED MANGO MATCHA LATTE:-
2 tbsp chopped Mangoes
Ice cubes
1 cup thickened, chilled milk
1 tbsp honey or agave syrup
3-4 tbsp warm matcha tea
ICED STRAWBERRY MATCHA LATTE:-
2 tbsp Strawberry Purée

How to make a Pina Colada - shaken, not blended ????
This simple combination of rum, pineapple and coconut cream is absolutely the first thing I want in my hand when I’m on holiday. It’s the Puerto Rican national drink, and while there are a hundred different ways of making it I like to keep it simple.

SPECS:
60ml (2oz) rum
60ml (2oz) pineapple juice
30ml (1oz) sweetened coconut cream
A fruit wedge and a cocktail cherry to garnish
A skewer or cocktail umbrella to garnish
EQUIPMENT:
A jigger
Shaker tins
A hawthorn strainer
A fine strainer
A hurricane or highball glass
METHOD:
Add all of your ingredients to your shaker tin and fill with ice. Seal the tins together and shake as hard as you can. Pop the tins open and double strain over fresh ice. Garnish with whatever fruit you have to hand, skewered (preferably by a cocktail umbrella!) with a cocktail cherry, and enjoy!
