Skinny Colada
Though summer is far behind us, there's no reason to deprive ourselves of a refreshing, tropical mocktail. This is my non-alcoholic version of a pina colada. Sip on this delicious drink as you sit back and look forward to next summer!
1.5 oz pineapple flavored hint water
1/2 oz maple syrup
1/2 oz fresh-squeezed lemon juice
Coconut-flavored LaCroix sparkling water
2 Lemon slices for garnish
Add the flavored water, lemon juice, and syrup, to a mixing glass. Shake with ice and then strain into an ice-filled rocks glass. Top off with sparkling water. Garnish with the lemon slices.

The Piña Verde (translates to Green Pineapple) is a herbal variation on the classic Piña Colada. The sweet pineapple and coconut tame the usually dominant Green Chartreuse, allowing the numerous herbs, spices and botanicals to be identified and appreciated.
Created by Erick Castro whilst tending bar at Polite Provisions, San Diego. Erick's goal was to create a rich, berbaceous cocktail which, over several years of tweaking, resulted in this simple yet flavourful 4-ingredient cocktail.

INGREDIENTS
- 45ml Green Charteuse (1.5 oz)
- 45ml Pineapple Juice (1.5 oz)
- 22.5ml Cream of Coconut (0.75 oz)
- 15ml Lime Juice (0.5 oz)
METHOD
1. Combine ingredients into your blender
2. Add crushed ice and blend
3. Strain into high ball or tiki mug
4. Garnish with a sprig of mint

Piña Colada
INGREDIENTS:
1 Dash Angostura bitters
60ml Pyrat Rum
60ml Pressed Pineapple Juice
15ml Coconut Cream
GARNISH: Pineapple Wedge / Cherry
GLASSWARE: Tall Glass / Sling
METHOD: Shake & Strain
ALCOHOL: Rum
HOW TO:
Step 1 – Pour all ingredients into a blender
Step 2 – Add approximately 6 to 7 ice cubes into the blender (number of ice cubes required may vary depending on the ice cube size)
Step 3 – Seal the blender and blend until drink has a smooth consistency (no ice chunks remaining)
Step 4 – Pour into a chilled Tall or Sling glass
Step 5 – Garnish with a pineapple wedge and cherry
Piña Colada
Name means ‘strained pineapple’, coladas can be made with any fruits.
The recipe originates in Puerto Rico from the 1950’s and 60’s, either from the Caribe Hilton or La Barrachina restaurant, there are now many variants of the recipe, the freshness and ripeness of the pineapple is key.

For the piña colada sauce:
• 1 ⅔ cups cream of coconut
• 1 cup crushed pineapple, drained
• 1 ⅛ cups sour cream
• ⅓ cup coconut flakes
• ⅓ cup mayonnaise

• 1 cup ice cubes
• ½ cup pineapple juice
• ¼ cup coconut milk
• 1 oz Coconut Rum *can omit
Method
-Bring all the ingredients together in a blender until smooth
-Can leave out the rum for a non alcoholic drink
