How To make Pork Chops with Scalloped Potatoes
6 rib or loin pork chops -- 3/4 inch thick
3 Tbsp butter or margarine
3 Tbsp all-purpose flour
1 1/2 Tsp salt
1/4 Tsp pepper
1 Can chicken broth
14 1/2 oz
2 Tbsp cooking oil
additional salt and pepper :
optional 6 c potatoes thinly sliced
1 med onion :
sliced
Paprika and chopped fresh parsley -- optional
In a saucepan, melt butter; stir in flour, salt and pepper. Add chicken broth; cook and stir constantly until mixture boils. Cook for 1 minute; remove from the heat and set aside.
In a skillet, brown pork chops in oil; season to taste with additional salt and pepper if desired. In a greased 13-in. x 9-in. x 2-in. baking dish, layer potatoes and onion. Pour the broth mixture over. Place pork chops on top.
Cover and bake at 350 degree F for 1 hour; uncover and bake 30 minutes longer or until potatoes are tender. If desired, sprinkle with paprika and parsley.

The base layer here (and the carb-y comfort) is thinly sliced red potatoes that get simmered with some onions in a bit of cream until they’re just fork tender. You want to be sure they cook through but don’t fall apart, so slice ’em thin. A mandolin is your friend here. They form a little bed in the baking dish, and that’s topped with some fresh rosemary and nutty gruyere cheese.
Pat the pork chops dry and give them a sprinkle with some salt and pepper, but there’s no need to sear them or prep them in any other way. Just nestle them down into that creamy bed of onions and potatoes and top them with more cheese and some Panko breadcrumbs.

INGREDIENTS
1/4 cup Panko bread crumbs
3 tablespoons olive oil, divided
3 large red potatoes, sliced 1/8-inch thick
1/2 yellow onion, thinly sliced
2 cups heavy cream
1 1/2 cups Gruyere or Swiss cheese, grated and divided
6 (3/4-inch thick) boneless pork chops
2 teaspoons fresh rosemary, finely chopped and divided
Kosher salt and freshly ground black pepper, to taste

PREPARATION
Preheat oven to 400°F and grease a 9x13-inch baking dish.
In a small bowl, stir together the Panko breadcrumbs and 1 tablespoon of the olive oil. Set aside.
In a large saucepan over medium-high heat, add the onions, potatoes, and cream. Season with salt and pepper and bring to a simmer. Continue simmering until potatoes are just fork tender, stirring occasionally. Reduce heat if needed to maintain simmer.
Remove from heat and transfer potatoes and onions to prepared baking dish. (A slotted spoon works well.) Sprinkle with 1 cup of the cheese and half of the rosemary.
Pour 1 cup of the cream from the saucepan over the potato mixture and discard the rest.
Pat pork chops dry with a paper towel and drizzle them with remaining olive oil. Season each side liberally with salt and pepper, as well as the remaining rosemary. Rub to coat chops evenly with oil and seasoning.
Arrange pork chops across the potato mixture, pressing them down lightly into potatoes. Sprinkle with remaining cheese, and then the Panko breadcrumbs.
Cover dish tightly with aluminum foil and bake for 15 minutes. Uncover and bake 15 minutes more. Enjoy!

Fried Pork Chops and Scalloped Potatoes

PORK CHOPS
Pack of 9 bone-in pork center loin chops (thin)
1 1/2 sleeves Nabisco Premium saltine crackers
Flour
Egg Beaters
Morton's Nature's Seasons Seasoning Blend (or regular salt) to taste
Pepper to taste
Wesson Canola Oil
For the batter, pulvarize crackers to a fine crumb and put in pan. In two other pans add in flour in one, and egg beaters in the other. On a sheet of parchment paper, lay out your pork chops and season each side. Heat about 1 1/2 to 2 cups Canola oil in skillet to 350 degrees. One by one, dredge each side of the pork chop in flour (shake of excess flour). Then dip in the egg beaters. Make sure each side is coated. Finally coat your pork chops in the cracker crumbs. Batter each pork chop and put on a wire rack to prepare for frying. Once the oil has reached 350 degrees, place 3 pork chops in the oil at a time. Fry for 3 1/2 minutes on each side. Once complete, place on wire rack with a paper towel covered sheet pan underneath to catch the grease. Doing this will keep your pork chops crispy as oppposed to them sitting directly on top of the paper towel in the grease.
SCALLOPED POTATOES
6 medium white potatoes
kosher salt
pepper
4 Tbsp butter
1 cups heavy cream
1/4 cup shredded parmesan cheese
Preheat oven to 350. Slice potatoes thin with a mandolin or knife. Heat cast iron skillet on medium high heat. Melt 2 Tbsp butter. Add in layer of half the sliced potatoes. Add other 2 Tbsp. Layer rest of potatoes on top. Season with two pinches of kosher salt and one pinch of cracked pepper. Cook for 2 minutes on stove top then add your heavy cream and parmesan cheese on top. Cover with foil and place in oven. Bake covered for 30 minutes. Uncover. Put oven to broil on high and broil for two minutes.
