Pork Chop and Cheesy Potato Casserole
My family loves this recipe! It is easy and so delicious. Pork chops are browned, then baked over thinly sliced potatoes in a cheesy sauce. You can't beat the combination of pork and potato, so this dish is a must try.
Pork Chop and Cheesy Potato Casserole
Ingredients
6 to 8 boneless center cut pork chops
1/2 cup chopped onion
1 garlic clove minced
2 tbsp butter
1 cup shredded cheddar cheese
1 cup chicken broth
1/4 cup half and half
1 can of cream of chicken soup
1 tsp paprika
salt and pepper
3 to 4 medium size Idaho potatoes
Instructions
1. Season the pork chops with salt, pepper, and paprika on both sides. Melt 1 tablespoon butter in a large skillet and cook pork chops a couple of minutes on each side. Remove pork chops from skillet.
2. Melt the other tablespoon of butter in same skillet you browned the chops. Add chopped onion and minced garlic and cook until onions are translucent.
3. Add soup, broth, and half and half. Stirring until creamy.
4. Gradually add the cheese until melted and completely incorporated.
5. Slice potatoes thinly and arrange in a 9 x 13 baking dish.
6. Place pork chops on top of potatoes.
7. Pour cheese sauce all over the top, shaking and jiggling to make sure sauce gets down in the potatoes.
8. Bake in a 350 degree oven, covered for 30 minutes and uncovered for an additional 30 minutes, or until the potatoes are tender. It might take a bit longer than 1 hour total.

spray pan one layer of potatoes onions and sprinkle flour salt and pepper repeat as many times as you can
put milk 1/2 or better on top of potatoes
brown pork chops add to the top

RUB INGREDIENTS:
1 tsp Worcestershire Sauce
2 tbsp ketchup
1 tbsp soy sauce
2 tbsp brown sugar
1 tbsp olive oil (or vegetable or canola oil)
1 clove garlic, minced
2 tsp apple cider vinegar
4 pork chops / cutlets , around 200-250g/7-8oz each including bone
800g/ 1.6 lb baby potatoes , larger ones cut in half
1 tbsp olive oil
Salt & pepper
Preheat oven to 220C / 430F (standard oven) or 200C / 390F (fan forced / convection).
Toss potatoes in oil, sprinkle with salt and pepper. Scatter on baking tray.
Place in oven for 15 minutes (giving them a head start).
Meanwhile, mix the Rub ingredients together in a small bowl.
Slather the pork on both sides with the Rub, reserving some Rub for basting. (See notes for marinating)
Take the tray out of the oven. Toss potatoes then push them to the edge.
Place pork on tray. Bake for 15 minutes.
Remove tray from oven, flick to broiler/grill on high (shelf about 20cm/8 from heat source).
Flip pork, spoon over reserved rub and dab on sides. (Note 4). Broil 7 - 10 minutes until pretty well caramelised.
Remove from oven. Use a brush to get the golden juices off the tray and dab it onto the pork - this is key for flavour and colour! Pop it back under the broiler for a couple of minutes to finish off.
Serve, scraping the juices on the tray onto the pork, then garnish with parsley if desired.
