Sweet & Salty & Unexpected - Recipe Tin Project: Potato Chip Cookies #12tomatoes
One of the most fun things about the Recipe Tin Project is that you run across recipes you would never have thought to make otherwise. Potato Chip Cookies is certainly one of those. I’ve never had a chip in a cookie, never thought to put a chip into a cookie… until now. And it kind of makes sense, doesn’t it?! After all, sweet and salty is a stellar combo and most things do better with a little crunch. Sometimes the unexpected is just the thing you need.
INGREDIENTS
1 cup butter
1/2 cup butter flavored crisco
1 cup granulated sugar
1 teaspoon vanilla
3 cups flour, plus 2 tablespoons
1 1/2 cups potato chips, crushed

Potato Chip Cookies | Potato Chip Chocolate Chip Cookies | Food Wishes
I’ll admit putting potato chips in chocolate chip cookies sounds a little crazy, but man does it work incredibly well! The texture is something you really do have to experience for yourself, since I find it almost impossible to describe. The potato chips don’t stay crispy, but they do stay sort of crunchy, which makes these one of the most delicious, and additive cookies I’ve every eaten. Enjoy!

Potato Chip Cookies Recipe
This cookie proves that sweet and salty truly is a winning combination. I took a salty staple (potato chips) and combined them with a classic sweet (sugar cookies) just to verify the sweet/salty axiom. They did not disappoint.
If you've ever had the Compost Cookies at Momofuku Milk Bar in New York City, you'll understand the thinking behind this, although this version simplifies it.
The potato chips manages to hold their crunch dispersed among the soft cookies, and the pecans I added put another layer of wonderful texture in too.
I love the darker color and depth of flavor achieved by adding brown sugar to a typical sugar cookie recipe, so I did one part dark brown sugar and one part light brown sugar here. The hint of molasses is exceptional up against the potato chips and pecans. And then I had fun by added a tablespoon of coconut cream liquid rather than a teaspoon of vanilla extract.
Ingredients:
2 sticks butter, softened
1/2 cup dark brown sugar, 1/4 cup light-brown sugar
3/4 cup sugar
1 Tbsp coconut cream liquid (or you can use 1 tsp. vanilla extract)
2 large eggs
2 cups flour
1 teaspoon baking soda
3/4 teaspoon coarse salt
4 cups crushed potato chips (I used 2 cups regular potato chips and 2 cup purple potato chips)
1 cup pecans, chopped
Cream together butter and sugars with a mixer on high speed until fluffy. Add coconut cream and eggs, and beat until just combined.
Add flour, baking soda, and salt, and combine well. Stir in potato chips and the nuts.
Roll dough into balls and place cookies baking sheet (lined with parchment paper or a Silpat liner). Bake until golden, 18 to 20 minutes. Let cool completely on baking sheet.
These cookies check all the boxes: sweet and savory, crunchy and chewy, and of course, fun and quirky :) #keepitquirky

How to make cookies you can't stop eating! You'd better make a whole bunch of them!
Ingredients:
1. 1 pound-Butter.
2. 1 cup-Sugar.
3. 1 teaspoon-Vanilla Extract.
4. 3 1/2 cups-All-Purpose Flour.
5. 2 cups-Crushed Potato Chips.
6. 1/2 cup-Chopped Pecans.
