1 lb Smoked tongue; cooked 3/4 c Butter; melted 1/2 ts Nutmeg; grated 1/4 ts Cloves; ground 1/8 ts Sage; dried 1/4 ts Parsley; minced 1 x Salt & pepper; to taste 1 x Clarified butter or lard Dice the tongue and put it through the grinder twice. Combine the Butter with the spices and herbs and blend into the meat, blending very well. Pack tightly into small crocks or jars and seal ea ch one with a thin layer of clarified Butter or melted lard. -----

Tacos de Lengua | Beef Tongue Tacos + Homemade Corn Tortillas (Cinco de Mayo recipe)
Lengua slow cook: 1 beef tongue Water or no-salt broth to cover (approx 1 gal) 1-2 onions 3-5 garlic cloves 1 tsp whole black peppercorns 2 tsp salt
Optional (very small quantity): Pinch oregano and/or thyme, 2-3 cloves, 3-4 allspice berries, 1 cinnamon stick, 1 dried chili pepper
Masa dough for tortillas: 2 cups masa 1 1/2 cups broth or water 1 Tbsp lard or oil Pinch or two salt
Chili de Arbol Salsa: 1 Handful dried chili de arbol 2 tomatoes or 1 can (preferably fire roasted) diced tomatoes 1 onion 2 cloves garlic 1 cup water Pinch salt
Put some browning/ char spots on the chili de arbols in a non stick pan, then add about a cup water to the pan and turn heat off. Put some browning/blackening on the onion and tomatoes in the oven on the broiler setting. Once you get a little color on the onions and tomatoes in the oven, throw the garlic in the oven and turn down to just cook the garlic without browning it (a minute or two). Put everything (tomatoes, onion and garlic from the oven, chilis and water from the pan, pinch salt) into a blender and blend till very fine. You can put this straight into a container or, if you want it it to work in a squeeze bottle, you have to strain out the seeds and bigger peel pieces.,

醬汁材料 Sauce Ingredients 杞子(浸泡)10粒 / 10 goji berries (soaked) 香糟露 1杯 / 1 cup Xiang Zao Lu 紹興酒 半杯 / 1/2 cup Shaoxing Wine 糖 1茶匙 / 1 teaspoon sugar 鹽 半茶匙 / 1/2 teaspoon salt 麻油 1茶匙 / 1 teaspoon sesame oil
做法 Method 1. 鴨舌解凍及洗凈。 Defrost and rinse the duck tongues.
2. 煲熱一鍋水,加入薑片、蔥和八角。 Bring a pot of water to a boil, add the ginger slices, scallion and star anise.
3. 加入鴨舌,開中火煮10分鐘至熟。 Add the duck tongues and boil for 10 minutes until fully cooked.
4. 準備一碗有冰的水,將煮好的鴨舌放入冰水內降溫,浸泡約5分鐘。盛起鴨舌,瀝乾備用。 Prepare a bowl of water with ice cubes, put the boiled duck tongues into the ice water to cool down, soak for about 5 minutes. Drain the duck tongues and set aside.
5. 混合醬汁材料,將醬汁放入有蓋玻璃食物盒中。加入鴨舌,放入雪櫃冷藏約4小時以上,浸泡時間越長,味道越香醇。 Mix the sauce ingredients well. Pour the sauce into a glass container with lid. Add the duck tongues and refrigerate them for about 4 hours or more. The longer the marinating time, the more the flavour.
