How To make Quick & Easy Cheese Or Chicken Enchiladas
Ingredients
1
each
enchilada sauce, large can
1
each
tortillas, package, corn or flour, small
1
each
chicken, breast, cut in small pieces
1
jack cheese, grated
1
cheddar cheese, grated
Directions:
Spray a 9x13 inch baking dish with no-stick spray. Place small amount of sauce in pan. Heat corn tortillas in microwave to soften. Fill tortillas with chicken, cheese or both. Fold over and place in pan, seam side down. Cover with remaining sauce and sprinkle with cheese(s). Bake for 45 minutes at 350 degrees.

EDIT 12/6/2020-I’m so happy to see so many of you guys enjoying this video! I added some Chili powder to the chicken to give it a little kick and it was amazing!
I’ve also been getting comments about the flour tortillas. Yes corn tortillas are the more traditional type of tortillas used in enchilada recipes, but I prefer the flour tortillas for my recipe. If you don’t like flour tortillas you can always use corn, but please keep the unnecessary hateful comments about the tortillas to yourself. There’s more important things in life to worry about ????
Ingredients needed:
-12 to 16 oz cooked and shredded chicken breast (I used 3 large chicken breasts in the video, this was 12 oz)
-8 oz shredded Mexican blend cheese
-One 19 oz can enchilada sauce (any flavor you choose)
-10 count large tortillas (Flour OR corn)
-9x13 size baking dish
Instructions:
-Preheat oven to 375 degrees F
-Coat a thin layer of enchilada sauce onto the bottom of the baking dish
-Mix shredded chicken, half the can of enchilada sauce and half the bag of cheese (or 4 oz) together in a medium to large bowl
-Place a tortilla onto a cutting board or any flat surface and spoon 1/10 of the mixture onto one side of the tortilla
-Roll tortilla closed
-Place filled and rolled tortilla seam down into baking dish
-Repeat with the rest of the tortillas
-Pour remaining enchilada sauce onto the top of the rolled tortillas
-Sprinkle the remaining cheese (or 4 oz) onto the top of the rolled tortillas
-Bake in the oven for 15-20 minutes (until cheese is melted and bubbly, I did 20 minutes)
-Let cool for 5 minutes and enjoy!

Easy Cheesy Chicken Enchiladas
Enchiladas are one of those go-to dishes that are great for a family dinner, a potluck, or a quick throw-togehter for last minute dinner guests. This recipe has been a family staple for decades and always pleases kids and adults alike.
Loaded with shredded chicken and cheese, these enchiladas are smothered in a cheese sauce that is good enough to eat on its own! We most often cook a couple of boneless, skinless chicken breasts in the instant pot before shredding, but have been known to grab a rotisserie chicken at the local supermarket on those busy days when we need to get dinner on the table fast.
We prefer using colby-jack in these super cheesy enchiladas, but don't be afraid to switch it up with some cheddar or straight up Monterey jack. No matter how you make these, you can't go wrong.

Making enchiladas can be a little messy, but just clean as you go ????
PRO TIP!!!!
The 2 morita adds a little smokiness if you can’t find them you can substitute for 1 dried chile
chipotle or you can simply skip on it ????
If cheese is at room temperature, it will melt in less than 8 minutes ????
Ingredients: 24 enchiladas
Spice mix:
Salt I used 2 1/2 tsp
2 tsp black pepper
2 tsp ground cumin
2 tsp chipotle powder
1 tsp oregano
Filling:
2 lbs chicken breast(sliced in half)
1 medium size potato; chopped in small cubes
1 carrot;chopped in small cubes
1/2 onion;sliced
1 jalapeño
1 roma tomato
2 minced garlic cloves
For the sauce:
2 chile ancho
2 chile morita
2 chile árbol
3 garlic cloves
1 tsp vinagre
4 tbsp tomato paste
5 cups chicken broth or water
4 tbsp butter(salted or unsalted)
4 tbsp all purpose flour
4 tbsp chili powder
Salt to taste
To assemble:
Oil
24 corn tortillas
Melting cheese of your choice
